Is to realize we messed up, get ourselves up and start anew by rectifying our mistakes. There’s no bigger fool than the one who doesn’t admit he’s made a mistake! Because then, he can’t make changes and rectify! And of course, I’m not just talking about cooking! Have faith! There’s no such thing as too late! There might be things that were right about us once! But it doesn’t have to be true forever.... ☺️

There are large parts of North America (beyond big cities, like where I am from in Canada), where adding *salt & pepper* is the definition of spicy & bell pepper is *exotic*

My mom always says that there's this similarity between desi and central American food which is why we're all obsessed with central american food in Karachi
They got a Salvadorian restaurant here in Phoenix, Arizona USA called el guanaquito. Im mexican and i fell in love with Salvadorian food! So good.

Method-wise, the aloo parathas remind me of Korean hoddeok. You take a dumpling dough, fill it with deliciousness, and then smash it down on a griddle with oil and pan-fry it.
My mom makes 80% flour and 20% potato filling type "aloo" paratha and I always complain cause I need more aloo lol

But, since I was 18, I have been craving them, but, I never had them cuz I didnot know how to make them. But thanks to your video, I can now make aloo parathas for myself and for friends. I made some last weekend, and they turned out great!!!! Thanks, Priya.
Saute some chopped onions in oil, and add in your spices for a minute or two at the end. Then throw that into the potatoes. Makes a big difference.

My Version Aloo Partha
1.Dough (whole wheat flour dough)with Carom Seed,little bit salt and oil.
knead a medium hard dough(you can add Spinach if you want)
2.for Mashed Potato Filling
Boiled Potato
finely chopped Onions,chili, parsley (optional: Shallots and basil leaves)
spice mix :-crushed coriander seeds,cumin seed & fennel seed,chili
power,Rock Salt and normal Salt.
and the whole process is the same but i prefer butter over oil.
served with fresh coriander/parsley chutney and ketchup

Who said we can't add parsley( fresh corriander leaf) to parathas.basil and oregano is not included in traditional receipe i accept that, but you can't generalize your recipe as best,many part of india have variation of recipes of the same dish like biryani. Also adding parsley certainly enhance the taste. Also i eat my partha with ketchup it is my choice. i never said that it is mixed in potato mix. It is my choice to eat it with ketchup. As in the video partha is traditionally eaten with curd and pickle.

Hey guys, I got the idea to make a "Desi Burrito". This is a (chicken) Biryani wrapped in aloo paratha.
The moisture is brought in by a little mint yoghurt, alternatively Daal, chole/Chana Masala or Palak paneer can be used.
Okay I would use leftovers, end remove the bones first. Am I going crazy or isn't that an awesome "snack"

The magical thing here is that simple hand-mixed dough that doesn't tear when you stretch it around the mashed potato. I have a feeling she mixed it for like 30 minutes to get the gluten to bind properly, like you would do with any western bread. The written recipe doesn't really specify how much you have to work it, but if you've tried making a loaf of bread yourself, then you'll know it takes like 10 minutes on a high-powered stand mixer to get decent results in the form of a uniform dough, and your hands are not a better tool.
The people here hating on her when she wrote a book called Indian-ish....have completely missed the point.

I don't understand why an "Aalu Parantha" needs to be translated to "Potato Flatbread"! No one makes such literal translation of Mexican or Asian Cuisines. People will get it. Spread the real name & spread your culture instead.
because most westerners will not touch it due to their *generic suspicion of anything from South Asia* (especially edible items)
so, one needs to translate everything, like alu parantha = *PAN FRIED POTATO STUFFED FLATBREAD*
or dosa = *fermented rice & lentil crepes*
or daal = *spiced lentil soup*
or chholay = *curried chick peas*

1) Do you order Chao Mi Fan or Chicken Fried rice when you go to a Chinese restaurant? You should be ordering Chao Mi Fan because that is how them Chinese say it.
2) Are you having Thai Basil Chicken or Gai Pad Krapow when ordering Thai food because they are the same.

Thanks for keeping these dairy and egg free. I’m going to take some of the suggestions from the comments and add some other spices such as cumin seeds and such, plus onions to the potatoes. As I’m familiar with Indian food, we do have a few great places around where I live (such as legit dosa places 🤤) yet I probably haven’t had this bread before. I’m not sure why though, I feel like I’ve been missing out 🤔.
Update: this was indeed so so bland! Even with the added suggestions 😓. It wasn’t difficult to make, and I thought rolling it out with the potato would be hard to do, but it was so easy. But the flavors was just not right. So yeah I have to agree with everyone here, this is a bland recipe. I would make some major changes including the dough recipe. Oh and the ratio for the dough was off too. Ahhh well I tried. ✌🏼🌱
I add a little salt and oil to the dough to make it soft. Dough can also be made with lukewarm water. And water must be added slowly, then knead the dough, again add the water. Water must not be added in one go. Search 'how to knead a dough' as even I don't know the proper way.
She adds very little spices. You are supposed to add spices so that it almost becomes yellow with turmeric. Plus you don't add raw onions. You temper finely chopped onions ,cumin, chopped garlic with vegetable oil. Check Nisha Madhulika's videos. Her videos are very authentic

you can literally put any spices in the potatoe mix and some salt in the dough itself, not much tho. i have never used fennel seeds.
It's great that she did aloo paratha because Indian cuisine is so wide and varied and this is like a staple and everyone loves it, so its really great that she's promoting lesser known recipes like this because lately Indian cuisine has become synonymous to tikka masala and naan

Im in a biracial relation ship. Im latina and my husband pakistani. I called it a papusa thing the first time a had a paratha. Itd like a trigo pupusa or a stuffed tortilla. Thats how i describe it to my family when my mixed kids decide they want paki food at tias house.

Peoples are complaining on everything these days! I only care that I found new way to eat potatoes and new breakfast menu!! Just switch any ingredients that you dislike to some ingredients that's match with your own taste!! After all, we are the one who taste the foods that we eat!! Unless you are cooking for someone else then you may need to considerate their preference and taste ;) not everyone have the same taste so just create your own!! Wow! What kind of dough do you use? I see so many different types of whole wheat flours. Some are with durum, some are called "chakka" or "chaki", etc. I see that the flour you're using is quite brown, and this implies to me that it's a whole-grain flour. This is absolutely amazing.

The fennel seeds served at Indian restaurants as mouth fresheners come with tiny spoons from which you can pick them up and drop it on your hand to consume them, so no. They do not have germs in them.
Cilantro tastes clean - yeah exactly to many people it has a 'soapy' taste to it, I don't mind it per say in small quantities but it has a distinctive flavour and I prefer coriander.

@@user-yv2qr4xt9 Sorry yeah it can be a bit confusing; where I live (Canada) cilantro is the leafy plant part coriander is the seeds produced by the plant. (so here coriander is a spice not a herb). Apparently, Mexican Cilantro, American(&Canadian) cilantro and Australian coriander are the same plant. Mexico calls cilantro the plant and cilantro seeds the seeds. America calls cilantro the plant and coriander the seeds. Australia calls coriander the plant and coriander seeds the seeds.

"Ghee on everything" - Priya Krishna 2020
Wow!!! That looks fantastic. I'd love to see how you made the dough and share with you what kind of flour you used, how much water you used to knead it, etc. There are sooo many flours out there, and I get such a huge divergence of recipes regarding the flour preparation.
Just get whole wheat flour. I use Ashirvad. Any Indian brand aata (whole wheat flour) will work. Get 2-3 cups in a big bowl, add 1 tsp salt and 1 tbsp oil. Now start drizzling warm water into the dough while kneading it. Don't do like she did by dumping all the water at once. You can always add more later. Start by adding ½ cup water and mix, then add little by little, kneading between each. It should be slightly sticky but not wet and super sticky. Cover and let it rest at room temp for ½ hour. Then knead again for 2 minutes. It'll get stretchy and smooth. It's ready now. You can always oil your hands if it's sticky, and add some more dry flour if it's too wet while kneading the second time.

Fresh diced green chilli’s instead of powder is definitely the way to go. So many varieties is stuffing ingredients but the one I favour has got to be lightly sautéed onions, green chilli’s, coriander, salt. It’s simple so doesn’t overpower the food you have with it. Can add mustard oil too in the mixture for a beautiful kick. Never use oil for these, best is ghee but try both or even butter 😋 lush and comforting

generally i suggest for paratha to use day old dough. specially cause for whole grain wheat dough is very fiberous and needs to be very wet. so for next day it will absorb the moisture to become more like all purpose. if you put just the right amount of moisture, you get a hard dry dough

I think those were cumin seeds, Priya, not fennel. Fennel is mostly used ONLY for meat/chicken preparations. Cumin/jeera is the mouth freshener you were talking about. :)

On your website, the recipe calls for 1/4 teaspoon of oil. Judging by how much oil she put into the dough, I think the recipe should be 1/4 cup.
