Im a bit new to baking. I noticed you used a glass baking tin,tray. I use a dark metal tin and the top and edges are always dark and slightly burnt. But your glass tray results in a much lighter cake. Do you notice a difference between glass and metal baking trays/tins?
Your observation is correct! Indeed there’s a difference in the baking in metal versus glass pans. Metal pans conduct heat quickly and evenly, promoting browning and crisping of the crust and that’s what happens in your case. Glass pans heat up and cool down more slowly, resulting in less browning and a softer crust and that’s what you saw with my glass pan 🙏

The rinse water would have a bitter taste from the lentils. You always have to soak lentils to remove it and rinse several times
