when you make your ganache, when you put it in a container and cover with plastic do you put it in the refrigerator or leave at room temp? and how long do you set your ganache before applying?

Hi, l really like your work, and have a question, When l coat my cake with ganache it keeps making air pockets under ganache like it will separate from the cake and it makes me like crazy, do you know the reason behind that?
Hi can I know that after you cover the cake with ganache, did you put it in chiller? And if you do, how long the ganache will last at room temperature or higher (e.g outside)? Will ganache melts? And if it's happen, will it affect the fondant? I hope you can answer my question. Sorry if I ask too much. 😅 Thank you

So you're using a super soft filling, if you fondant that cake won't that lead to bulging and sagging with such a soft filling? How do you prevent that?
