James these are some huge flour tortillas, in fact some of the biggest of ever seen. The only time I have ever seen flour tortillas in Mexico was in Sonora. Perhaps they are available elsewhere, I've driven through Hermosilo on my way to Guaymas, and saw they used flour tortillas. But never have I seen this large of the tortilla, I can just imagine the size of a burrito you make one of these.
The Bald Chef those tortillas name are sobaqueras Armpik tortilas ,if you been trying the burritos Percheros? are made with those kind of tortillas you should try it ,if some day back to Sonora..
Linda Flores i grew up in the sierra of Sonora. Met some people over the years who had been raised in up in the ranches far up in the sierra ( think yosemite like ) they all were trained in this kind of tortilla making. It is native to this area. It is a healthier tortilla because it has very little lard. Because of this they become brittle very quickly ( next day the texture has changed dramatically ) but if u ear them hot out of the comal they are soooooo goooodddd very strong flavor due to the smokiness of the comal. They are super thin so in weight and calories one of this may be smaller then ur average supermarket tortilla believe it or not. They are so thin they are almost transparent. These burritos they talk about here are also the best ever. Sonora is also the center of high quality meat in the whole country famous for its meats u will find carne asada very very good quality meat in every burrito stand. Also burritos are not stuffed to the brim like in the US so they r stilll big but u can finish one for sure and not die. They also dont use rice in their burritos that is just weird in the US.
My family is from Douglas, AZ. When I was a child we would visit every summer. Back in the 70’s you could find these tortillas everywhere. Sadly today they are rare. You can still get them across the border in Agua Prieta, Sonora. I’ve also found them in Nogales, Sonora. They have a taste all of their own.
I've never considered these to be used for making a large object to eat but rather the companion to what you are eating. A good bowl of cheesy refried beans and one sobaquera make a meal for me. Add a steak grilled al carbon... I'm dying for some of that right now. The tortilla texture and flavor add an element to a meal that cannot be duplicated by a machine made tortilla. I would love a recipe for making these types of flour tortillas. It's hard to find large flour tortillas for burritos here, and most of the ones I make end up being too thick. I wonder how to go about this technique?
