    I started using one of those knife safety gloves while grating carrots & cheese by hand. Saves your skin & nails & can be tossed in the washing machine.

    Folks, I highly recommend you get a food processor. I bought a $100 one way back with some attachments and have never looked back. Way easier than a cheese grater. Mandolins are another nice thing. You can take a half cup of the shredded veggies spoon into a potato ricer to get all the liquid out. This recipe is awesome and I make a batch of these a few times a month.

    Hey man, i am from germany and i love your Videos SOOOOOO MUCH. I have a tipp for you. You can use juicer for the carrots. The juice i use for my green smothies to give them a better taste. The dry leftovers is will use from now for these recipe. I guess you can make the same with the zuccine and freeze the juice. The green smoothis btw i have from your videos how to become a superhuman. Wow, the more i think about it, thats the ideal way to use really everything. I like to freeze the juices because when you make smoothies you need a lot Ice-things that you dont have a warm smoothie at the end. thank you Josh

    I love that these are gluten-free without a proprietary mix, I love that they have hidden veggies, and I love Zwilling! One step is missing with sealing those bags though. After extracting the air from the bags, press the center of the red button to complete the seal. I used to wonder why sometimes I would find the bags had lost their seal, until I read the instructions, lol.

    Since discovering your channel... I've eating baked oats... apple/cinamon and sherry/choc hit my spot. I think I will need to try this muffin-batter... but, as I try to overpower you in lazyness, will take the baked-oats approach and slice em afterwards.

    Yea l love Veggies made Great muffins.. Eat them daily but the price is nuts and they have gone up even higher here in Florida. They are now almost 8.00 a box. I am so glad to find this recipe. Still new here but everything we have watched and tried has been great. My hubby is really happy because this product is hard to find and he is sick of running all over town for my "supply". Thank you for a informative and motivating channel!

      What's even better is that a handful of zucchini only costs a few bucks. A few carrots less than that. Honestly this whole recipe is nice and cheap and probably only costs cents per muffin!

      when I made the recipe I didn’t have enough bananas or eggs, so I substituted:
      3 bananas for: 1 banana + 1 cup unsweet applesauce
      6 eggs for: 2 eggs + 3/4 cup egg whites
      I made some in a muffin tray with liners and some in an 8x8 brownie pan, which needed closer to 35 mins (not positive because I checked it every 6 mins with a knife)
      I liked them a little better from the brownie pan, but they were both also better once they cooled off!!

      also definitely used a food processor for grating, I gave up hand-shredding carrots from the pain and length of time it takes

    I just made these and they are delicious! I got 18 jumbo size muffins for 198 calories each when dividing the total recipe. Even my vegetable hating roommate ate three instead of dinner.

    Use a juicer and you can get juice as well. That pulp is basically what comes out from the high speed (cheaper) ones.

    I am going to actually do this this weekend for me. But I am thinking what about a bit more protein? Maybe leave the liquid the veg and add chocolate protein powder? and instead of chocolate chips use peanut butter chips?

      What don't you like about them? Maybe I can help. Lots of times they're just cooked wrong. Like, I love zucchini but nothing is more gross than mushy overcooked, bitter, slimey zucchini. It should be firm but tender and well seasoned

      add cocoa powder! One of my favorite cake recipes is chocolate zucchini and you can neither see nor taste the plant material. 100% kid tested & approved.

    Did you use real maple syrup? I'm trying to figure out if it was factored into the macros.

      I just double checked. The syrup was included in the calculation but it looked a little light in the database I use and I didn't catch it when I wrote out the recipe. I use an API called Spoonacular and they have 240g of syrup at 650 calories. I checked the USDA Nutrition database as well and they have it at 624 calories. The label of the maple syrup in my fridge says 840 calories. If it is 840 calories per cup, it would be about 126 calories per muffin and 21g of carbs. Good eye

      You could but I wouldn’t add more than 60g and you may need more liquid

      Avocados are a lot more fatty and far less sweet than bananas are. You'll probably need to add extra sweetness to the recipe since Josh is using bananas to flavor and disguise the taste of vegetables

      I think that may take too much of the liquid out and will make them dry but you could probably dump in a bit of the juice

      It depends on the pan in my experience. One of my pans comes out completely clean and the other sticks a bit where I have to use a butter knife to help them come out

    Interesting recipe, but 40 g of maple syrup and 15 g of chocolate chips for 100 g of vegetables? I think I'd replace some of the oat flour with whey and cut down on the syrup. To each their own though.

      I used half a cup of maple syrup (because that was all I had,Lol) and the muffins turned out fine. I'd probably would cut back on the bananas and use some applesauce , it was a little too much banana bread like for my taste. And, I forgot to add the chocolate chips so that cut out some calories too. Don't miss them

    Things I don't have time for when I'm meal prep'ing to save time: 1) grating and squeezing vegetables one by one and 2) loading muffin tins one by one with an ice cream scoop. According to your recipe, each muffin has 16 grams of zucchini and 3 grams of carrots, so you aren't even "sneaking in" that much of the vegetables. At that point you should just buy a greens drink if you want to consume vegetables more easily.
