How to grill a pizza in a cast iron skillet.

  • The crust on this grilled cast iron pizza gets crispy and holds up to a ton of toppings. Plus, this pizza recipe is SO easy, especially once you get the hang of your weber charcoal grill and can keep it at a high temp. Adding the cornmeal to the skillet before adding your pizza dough is like icing on the cake for the crust!
    My family eats pizza at least 2 times a month. I admit I like pizza, but I don't LOVE pizza. By putting your pizza on the weber kettle in a cast iron skillet, it totally changes my opinion on average pizza. The flavor that you get from adding some wood chunks takes it to another level.
    Recipe
    1. Allow store bought dough to sit out at room temp for approx 45min.
    2. Butter your cast iron skillet very liberally. You can add some olive oil too. This just adds flavor and allows the crust to set before burning. I used Avocado Oil because that's my new go to.
    3. Start your charcoal for your grill. One chimney should do. Allow all charcoal to be lit and spread out in a "doughnut" shape. This allows the heat to come up the sides and not directly underneath. Target temp should be 400 to 600 degrees. My pizzas cooked at about 550 degrees for 10 minutes.
    4. Spread some pizza sauce all the way to the edges, about 1/2 cup.
    5. Add a mixture of white Italian cheeses. We used everything from Mozzarella to Parmesan. Here is the secret with cheese... Spread heavy on the sides. This creates an incredible crust with those little burnt edges. YUM!
    Use more cheese than you might think. We used about 12oz for a 12 inch cast iron skillet pizza.
    5. Layer with your favorite toppings, and cook for about 10-12min. Whatever you do PLEASE allow to cool before you eat it.
