Meals I cooked regularly when my Dad was alive were; Hunters chicken (I know you’re as funny with chicken as I am, so I’d just cut all the funny bits away but keep the chicken breast as whole as I could), wrap with bacon, pop into the oven for 25 mins or until cooked through, top with bbq sauce (I’m sure you can locate gluten free or there’s a recipe online to make your own with passata!), top with grated cheese & serve with mash / wedges etc & veg! Sausage casserole, I throw it all in the slow cooker & mine is gravy based not tomato based. I’d brown the sausages in a pain first to get some colour on the skin (can be done in airfryer), pop in the slow cooker with onions, carrots & mushrooms, use 2 veggie stock pots, I only fill roughly under halfway as veggies make a lot of liquid, add some mixed herbs & white pepper, & thicken with gravy granules! Serve with mash, veg, Yorkshire etc. I make a spaghetti bolognese with quorn mince, really flavourful but it does take time so I batch cook. Happy to send over my recipe if you’d like it. Once the sauce is done it can be used as spaghetti bolognese, in stuffed pasta shells or as lasagne. Have you ever heard of campfire stew? It’s essentially a chilli con carne made with one of the 750g joints of gammon! It’s gorgeous! And not spicy unless you’d like to make it that way. Recipe is online but I adapt & just use a packet mix - but you can absolutely use spices, as I’m on my own packet is easier (& no franks red hot chilli sauce in mine), I also add kidney beans in chilli sauce (not hot at all, but give a lovely rich flavour - think very very mild tinned chilli flavour, but that richness works wonders), & I add a tin of baked beans alongside peppers, onions & mushrooms / garlic! Lovely meals! Had the chuckle at the pizza comment. I think frozen pizzas have come a long way now from the bog standard ones we had as kids lol xx
