Hell yeah, you can use the idea of this recipe for all kinds of fillings. I've had chicken curry, general tso chicken, minced beef and liver, bacon egg and cheese breakfast kind. mini pies are so versitile.

I used to buy a frozen version of this from Costco here in the US called "Aussie Pies" but they were chicken inside, with chicken gravy. They stopped selling them many years ago and I've wished I could find something like this ever since! Love this recipe, and would love to see a chicken version of it from you also! White wine and chicken stock maybe the only changes? Not sure about the tomato paste though...

Damn Jack buddy. Just made the filling. Almost burnt because of flour in the recipe so early. Had to stirr for 3 hours to prevent it. Since I am a begginer cook maybe give us heads up for next time. Thnx buddy. Tasted amazing
Looks amazing! i'm for sure making these! btw same size veggies wont cook equally fast, onions cook and break down a lot faster than carrots for example, as im sure you already know. I know they're getting cooked for a long time here and all of the different veg will be cooked and so on, but it's kind of misinfo to tell people watching that they'll all cook at the same rate just because the size of the pieces are the same. No hate tho, love your vids and can't wait to try these out!
If you like mushy carrots and raw onions you should change the veg size but the onions are there for flavour and the carrots are there for texture above flavour so to chop them up to the same size you are getting the best of both worlds!
If you want to freeze it, would you place the puff pastry on top but not egg wash it until you're ready to bake it? Or would you bake everything off and then freeze it?
@@yaowsers77 best to freeze them right before. Assemble the pie and don’t put the egg wash on. When your ready, bring them out the freezer, thaw, egg wash and bake 🙌

Hi Jack. This was great!! I have a certain make of cast Iron pot with a distinct "orange" colour made in France.. I was disappointed that it was recommended not to preheat this make as IT MAY" affect the finish of the pan in the long term.. The pans you are using look great!! would preheating damage the surface ?? Can metal be used with this style of finished pan.. Thanks Lochness Scottish Highlands..
How long can I keep these completed pies in the fridge before cooking them. Would they be ok overnight so I don't have to make the same day???? Thankyou.
If the pies are made, they’ll last 2-3 days in the fridge before cooking. Don’t add the yolk until your ready to put them in the oven 🙌 they can also be frozen at the same stage

The tikka thing? That's not a problem though, because why wouldn't a 100% British invention be considered the British national dish? And as our national dish, it is ACTUALLY ours. It does flit back and fourth between fish and chips and tikka masala, sometimes even a full English breakfast, and a roast dinner gets mentioned every now and then. However, as of May 2024, Fish and Chips is actually the national dish of Britain again, as it goes. With regards to the meat pies, no one British is whining about this being a classic outside of Britain. With the antipodean link to Britain I'd expect some of our national dishes such as pies, fish and chips etc to be high on the menu in that geographical area there too. Maybe people think of chicken tikka masala as not being British enough, despite actually being created within the British isles, and it actually does not exist in India, which people assume is where it is from. "Poms" don't whinge or whine about the fact that you guys love this classic, they are quite happy that our cousins on the opposite end of the planet still enjoy decent home cooked dishes of British origins like we do. Of all our cousins the world over, the antipodean branch, as well as the Canadians, whether you like it or not, are the branch of the family that are closest to us poms. At the end of the day, you guys are basically us with better weather, and from what I've seen over there, food wise, you tend to like, mostly, the same stuff as we do. Whether it comes to food, sports etc, which, again, is evidenced by the fact you love a great pie. Nothing to whinge about there. Now, on the other hand, that other, sad excuse for a meat pie, a stew with pastry on top, that the American branch of the family produce... Well, that IS something to whinge about! I think they call it a 'pot' pie? I once heard an unprovoked tirade by an American gentleman, holidaying at the same hotel in Sydney, Australia as we were, after my wife and kids and myself had been out for a burger at Hungry Jacks, and my 8 year old son was happy, and said he liked it because it was just like the Burger King we went to back home, and before I had chance to explain to my son the reason for the similarity, the American gentleman inserted himself unprovoked in to our conversation, first of by giving us his full name, including first, middle and last names, and then the town, city and state he was from, before launching in to complaining about how Hungry Jacks were "ripping off" Burger King, with everything from the logo down to the menu being a straight rip off (I don't see how as I didn't know burger king in the USA did pizza?) and not catching a breath, he was going blue in the face ranting over things that don't matter, saying things like "why do other countries feel the need to 'steal' all the great America food ideas?" and he was being totally straight faced when he reeled off those foods he said were 'invented' in the USA - such as Burgers, Hot dogs, Pizza, Donuts, Pasta, IceCream,Tacos Apple pie and the like. I can't vouch for New Zealand as I've never been, but I've no reason to doubt how good their pies are, but I've been to Oz and I've got to give it to them over there, they know how to make a proper British meat pie as good as any I get back home. The only ones I've had that beat them are my mum's, my wife's, and my local butcher/baker. I've even had good meat pies in Canada, but am yet to have had a good meat pie in the USA. I've had good seet pies there, but nothing savoury. And supposedly, the steak pie I had in an "authentic" Irish "pub" in Boston was supposedly made at a local bakery owned by an ex-pat Brits who lives out there. If that is true, he/she should be very ashamed of themselves. It was dire I think the difference is Brits/Aussies/Kiwi/Canadians etc seem to know that the best things only need minimal but good quality ingredients to produce something spot on, where as the American palate tends to be geared towards adding more flavours, sweetening things up, adding more, unnecessary ingredients, making whatever it is bigger and better, at least in their eyes, but then they don't stop doing so even at the point of risking ruining something. American bread, for example, has that many fillers and so much sugar, it is sweet enough to be considered cake in most of the rest of the world. I do find more and more Americans seem to be getting a love for British meat pies, sausage rolls etc so maybe that palate is changing. But yeah, no whining about you guys enjoying a good meat pie from here. More proud that you are keeping the traditions alive, if anything. Good on ya. When I saw a Pie and pea float first time I went to Oz I could have cried. It was a thing of beauty, and reminded me of the ones I used to get from the chippy back home. There's something about going to another country and seeing them eating the exact same thing that you were brought up on and it gives you a feeling of pride and closeness with that place. I felt more at home and less alien in Oz than I have anywhere else outside of the British isles, except maybe Canada too. The people I met in both those countries felt the same as us, liked the same foods, know what a wanker is and how to take the piss properly, we get each others sense of humour, can call their friends a sheep shagger or the "C" word without fear of anyone crying or fainting, and can all spell words, such as "colour" the way it was intended! It's just a shame all 3 of our countries have all now got arseh*les in full Governmental control at the minute. I'll tell you now, If things get really bad, and they come after our meat pies, it will mean all out W.A.R. They can take our rights, our freedoms but they ain't getting their hands on my pies. Sorry for such a long reply. I get quite passionate about pies! I also apologise for any spelling errors or bad grammar in advance. Keep munching those pies.
I have a question: you said heat up the pot to an extremely high heat. But then you said to use olive oil. Doesn't olive oil go up in flames at such a high heat?
Would love to make it, but can I use lamb? Would it taste as good? Don't eat beef. Can I bake these in an airfryer? Would I have to blind bake the pastry first? Please🙏 tell me how you keep your stainless steel stove so clean and spotless?
An Australian beef pie doesn't have carrot, or chunks or vegetables in it. If anything, maybe, it might have some onion floating around in it. But its usually just the gravy, tender beef steak, and pepper. What you made is more like putting a beef casserole from Australia into a pie crust.
Random question but you mention about freezing egg whites, is there a specific way to store them or just air tight container and fire them in?? Also, pies look dynamite 🧨

I can't vouch for New Zealand as I've never been, but I've no reason to doubt how good their pies are, but I've been to Oz and I've got to give it to them over there, they know how to make a proper British meat pie as good as any I get back home. The only ones I've had that beat them are my mum's, my wife's, and my local butcher/baker. I've even had good meat pies in Canada, but am yet to have had a good meat pie in the USA. I've had good seet pies there, but nothing savoury. And supposedly, the steak pie I had in an "authentic" Irish "pub" in Boston was supposedly made at a local bakery owned by an ex-pat Brits who lives out there. If that is true, he/she should be very ashamed of themselves. It was dire
I think the difference is Brits/Aussies/Kiwi/Canadians etc seem to know that the best things only need minimal but good quality ingredients to produce something spot on, where as the American palate tends to be geared towards adding more flavours, sweetening things up, adding more, unnecessary ingredients, making whatever it is bigger and better, at least in their eyes, but then they don't stop doing so even at the point of risking ruining something. American bread, for example, has that many fillers and so much sugar, it is sweet enough to be considered cake in most of the rest of the world.
I do find more and more Americans seem to be getting a love for British meat pies, sausage rolls etc so maybe that palate is changing.
But yeah, no whining about you guys enjoying a good meat pie from here. More proud that you are keeping the traditions alive, if anything. Good on ya. When I saw a Pie and pea float first time I went to Oz I could have cried. It was a thing of beauty, and reminded me of the ones I used to get from the chippy back home. There's something about going to another country and seeing them eating the exact same thing that you were brought up on and it gives you a feeling of pride and closeness with that place. I felt more at home and less alien in Oz than I have anywhere else outside of the British isles, except maybe Canada too.
The people I met in both those countries felt the same as us, liked the same foods, know what a wanker is and how to take the piss properly, we get each others sense of humour, can call their friends a sheep shagger or the "C" word without fear of anyone crying or fainting, and can all spell words, such as "colour" the way it was intended!
It's just a shame all 3 of our countries have all now got arseh*les in full Governmental control at the minute. I'll tell you now, If things get really bad, and they come after our meat pies, it will mean all out W.A.R. They can take our rights, our freedoms but they ain't getting their hands on my pies.

I have a question: you said heat up the pot to an extremely high heat. But then you said to use olive oil. Doesn't olive oil go up in flames at such a high heat?
It’s not extra virgin olive oil and the pan is not seriously hot to the point that happens. You never want the pan that hot

An Australian beef pie doesn't have carrot, or chunks or vegetables in it. If anything, maybe, it might have some onion floating around in it.
But its usually just the gravy, tender beef steak, and pepper.
What you made is more like putting a beef casserole from Australia into a pie crust.

Can’t beat a good pie. Sometimes I like just meat and gravy in them, sometimes I’ll put veg in, depending on whether I’m having it with mash or chips. That’s looking good. Pastry is always my nemesis, so I buy shop bought
