These flaky pastry delights are packed with creamy vegan cheese, savory sun-dried tomatoes, and fresh asparagus, all wrapped up in a crispy filo crust. Simple to make, and bursting with flavor, these mini delights are the ultimate crowd-pleaser. Watch my video to see just how simple it is to whip up these irresistible treats! ….     INGREDIENTS (for 12 mini strudels) 📋
    9 sheets of filo pastry
    250 grams vegan cheese (that can be cubed and melts in the oven)
    2 bunches of asparagus (about 1 kg)
    12 sun-dried tomatoes in EVO oil
    Salt and pepper
    PROCEDURE 🍴
    Overlap, brushing them with oil, 3 sheets of filo pastry. Cut out 4 rectangles.
    Do the same with the remaining sheets. You will have 12 phyllo dough rectangles.
    Place cheese cubes, finely chopped sun-dried tomatoes and 3 or 4 asparagus on each phyllo pastry rectangle, fold the phyllo over the bottom and close in a strudel shape, leaving the asparagus tips sticking out on one side.
    Bake at 200° for 20 minutes (golden brown and crisp).
