Spanakopita is an authentic greek recipe.🇬🇷 Good morning from a Greek-French woman who lives in France but grew up with mom's classic Greek food! A favorite recipe, a dish full of memories that deliciously accompanied lazy Sundays and holidays. Every family has its own signature recipe. In our recipe, in addition to spinach (1 kilo) and feta cheese ( 300g - 400g), we add 2-3 leeks cut into thin slices, 1 grated fennel (gives a great aroma), 8-10 green onions, 1/2 bunch of dill, 1/2 parsley, 8-10 slices of yellow cheese ( emmental or gouda or edam or graviera) and the juice from a lemon. We can also make a large spinach pie in a pan with a diameter of 36-40 instead of small spinach pies. We can also replace the leaf with puff pastry (it is also delicious). If we make a large pie, it is good to add half a cup of tea of semolina to absorb the liquid and not soak the bottom layer of the pie. Thank you! It was a success! I did need to do just one at a time, and also quickly learned that damp towel does not mean wet towel. Mine were a little oily when done. Maybe I over buttered. But delicious. I'll make them again. 😄
I made this earlier in the week and it turned out lovely. The only thing I really did differently was that I added lemon AND orange rind to the recipe, because I just happened to have a lot of oranges lying around. I must say, it added even more loveliness to the flavour. I think I was a bit heavy handed with the oil as I was brushing the pastry, but that is a learning thing and next time I'll do it a bit lighter. I really enjoyed the spanakopitas and will make them again. Thanks for such a nice recipe 🙂
I made a version of this with 1/4 tsp each of cumin and coriander and 1/8 tsp of nutmeg. It added a little bit of depth to it. I believe it was from Tyler Florence Also try adding a small sprinkle of oregano onto sheets in between each layer
Another winning recipe from the Feelgoodfoodie! Love the assembly line suggestion, worked great. Filling was delish, we used our home grown green onions, parsley and spinach. I added the cream cheese as suggested and a quarter cup of mozzarella. Yum!
I would love to make this! I’m going to have to use vegan feta cheese, however When you say the spinach is drained, do you mean that it’s squeezed dry to remove the moisture?
The trick to using philo is to remove it from the freezer and let it thaw over night in the fridge. Let it reach room temperature for 2-3 hours before opening the package. Make sure you cover the stack with a moist towel as you work one sheet at a time. This process works for me making spanakopita! 🇬🇷🇺🇸

Yes! Two layers of pastry.
2.5-3 inches wide, 12 inches long phyllo.
Also a lot cheaper than buying them pre made.
