- Teriyaki is notably known for it's sweet and tangy sticky sauce. The caramelization of the sugars is what gives the teriyaki sauce its luster and glossy shine.

Alex was Born and bred in Glasgow..He's been working now in various Chinese takeaways
as a delivery driver for the past few years or so.
Most of what he's learnt is just by watching the chefs..
In all my videos i use a high power burner so cooking temperature's may vary cooking on a normal hob.
I use a Cantonese style of cooking meaning caramelisation of sugars, maillard reactions, and smoking of oil
creating a smoky barbeque scent commonly known as Wok Hei.When i cook i'm imersed in that aroma.
Even without an industrial heat source you can still create some amazing food.
The most important part is using the correct condiments

Quick note. If anyone using electric to cook stuff like this I would recommend getting and using as I do a Jamie Oliver TEFAL hard anodized 30cm wok with riveted handle..Great piece of kit..if u let it heat up properly then it retains heat really well and amazing non stick..I use it for everything.. and u can put in oven or under hot grill

Obviously the chefs have everything laid out in front of them, but you have shown how fast these dishes are to cook.

I appreciate that maté thanks. A bit a engineering was used in building the wok station. It was actually my mate who built it ,normally he builds ships, not joking by the way. I basically told him what I was after and came up with this . I was blown away with it when he appeared at my door. I have a video explaining more which might help a little bit but to be honest I haven’t a clue how he done it all . Hi Alex i am quite new to your channel and the more i watch your mouth watering recipes being created the more i want to make them i mainly cook BIR recipes but not many Chinese recipes i know you have an E book but have you ever thought of selling hard copies?👍
Thanks Chas and great to have you onboard. I would love a hardback but that can be quite costly ,what I do is basically just a hobby and to take it further than that could be quite expensive. I’m just praying you have some sort of publishing experience to point me in the right direction, that would be great. I’ve been waiting for a while for someone to come in and possibly see the potential and then publish the book without me being out of pocket . To self publish requires many skills like IT etc, I don’t have anything like that so I would definitely need to bring someone in ,cheers Chas
