Alex was Born in 1958 and bred in small village in Glasgow..He's been working now in various Chinese takeaways as a delivery driver for over a decade now.
Most of what he's learnt is just by watching the chefs.I've had no formal training but worked as chef in an Indian takeaway for many years also as a delivery driver but after constantly annoying the chef he let me cook a few things and eventually progressed to a chef.I only drive for them in the Chinese unfortunately but still learn loads.
I apologise for the quality of the video,i was trying to be as discreet as possible .

In all my videos i use a high power burner so cooking temperature's may vary cooking on a normal hob.
I use a Cantonese style of cooking meaning caramelisation of sugars, maillard reactions, and smoking of oil
creating a smoky barbeque scent commonly known as Wok Hei.When i cook i'm imersed in that aroma.
Even without an industrial heat source you can still create some amazing food.
The most important part is using the correct condiments

Great video, between your videos and Chin and choo's takeaway book I'm getting better results than the takeaways in Clydebank where I live. Being a builder, I go to LSK at the bookies around the corner. Next time I'm heading into Mathews first to stock up

That always happens, I’m the same and it ain’t cheap by the time you’ve stocked up but still cheaper than your usual supermarkets . I’ve always bulked buy but saves you a fortune in the long run, cheers mate 👍

Hi Alex. Is that eagle brand rice jasmine? Would you say jasmine rice is best for fried rice dishes?
I would say most takeaways will use Jasmine well in Glasgow anyway and eagle brand seems to be the most popular and cheapest but still quality, cheers pal 👍
Think i'll pop up later for some MSG and other odds n ends , last time i was up they were sold out of the small bags of msg...... , sometimes it's a bugg*r to get parked though.
Is there another Chinese supermarket very close to Mathews Alex ? Someone said there was , not Seewoo as i know it's closed down , but another right next to Mathews.
Chung Ying at Doabies loan have load of the smaller bags of MSG, the shops not as big but still have a decent amount of stuff, cheers mate 👍
Yep there is another one Ive seen the sign for it right next to Mathews Its called Chans Ltd its in Farnell street just up the road Ive not been in Chans though
We got a similar one near me and i go about every 3 months and buy all my spice, sauces and oils. Costs less than 50 quid and it would be double that at least in tescos, asda etc.
Your right Jay , just about half price for everything and the bottles are bigger, I can spend ages in there, I get loads of ideas for recipes 👍
Hi can you tell me what curry powder you are using for the curry paste now please? RMD?
I've heard people use Eastern Star but it doesn't taste like the curry sauce you get in Lanarkshire Chinese takeaways.
I don't want to buy a massive tub of the wrong one.

To set the record straight William not many use eastern star contrary what people are saying. This is what they all use is wrong to say . Takeaways use loads of different brands of curry powder but in any the takeaways I’ve worked it’s either golden leaf or as you said RMD but others are used also . The problem is the large tubs are the only thing that’s available, they don’t sell them in smaller portions. Eastern is available only because someone is buying the big tubs of the stuff and then selling them in affordable smaller packs . I bit the bullet and bought a tub of the RMD , I have enough to do me ten years, I’ll never use it all in lifetime because I very rarely make curry’s because of all the worked involved and can be a pain, if I want something quick I’ll just buy a decent ready made curry paste or curry powder, cheers William and also I appreciate you supporting the channel 👍
