I have personal lesson; I used to cook mushrooms in fat or oil but I learned from a friend, "If you want your mushrooms to have a richer more umami taste, cook the mushrooms without oil until they are less squeaky / golden. Then you add the oil or fat so the mushrooms don't burn.
