  • you must soak the 12 or more trimmed elderflower heads in 1.5 litres of water with a sliced lemon for 3 days with a lid on. when you strain off the flowers and stuff , there is a strong smell, DO NOT WORRY this is normal , continue and after cooking and preserving in jars , that odour is gone , i have heard that there are two types of elderflower, and one smells like this and the other doesnt, i dont know, but dont be put off , you will love this on a cold winters day and the memories of summer will fill your mind , and the tastes fill your palate.

    Wow, that looked and sounded tasty, although I don't know what Elderflowers are. Great new intro, I like it... And thanks for the shout out bud, we all really appreciate the well wishes.     Hey Dave! I just went outside and looked and I think, think, think, I have this same elderflower bush.
    Pretty cool that it lasts so long, I love when stuff is still good way past normal time.

    I have never heard of Elderflower Jam, I have never even heard of Elderflowers :( Where do they grow? It must be very tasty I imagine :) A "BIG" thumbs up :) ROCK ON!!!!!!!

    Thanks for the shout out, Dave! Antonio is well on his way to becoming a you tube sensation! Like so many others, I haven't even heard of Elderflowers. Elderberries, yes (Monty Python)...heh heh. Are they related?

      SmokeyGoodness indeed they are related young Dan, the flowers if left on the tree go on to become elderberries, but you have to get them very quickly as soon as they ripen , the little birds devour them fast.

    They are blooming right now here in Central Indiana. I don't think I will be making any jam though. Love watching the video though.

    you say at the start 2kg of sugar but the bag you use is a 1kg bag.

    Couple of questions if I may Dave.
    1. You use pectin powder - would something like apple peel and lemon (rich in pectin I believe) be a more "natural" source that would still work?
    2. Do you use wax discs before screwing the lids on to the finished product? I'm not sure what they do but you see them on some jams and not others.
    Thanks! PS - I love your comment about using this jam on a winter's day and being reminded that there IS a summer!

      1. yes for sure you could use lemons or possibly apple peel just experiment on the ammount , the main thing is to reach that setting point without going over and turning the jelly in to too thick a jam in my opinion. 2.Wax discs , no i dont use i just make sure my jars and lids are sterilised and put on tight , whilst still hot , and as it cools you hear that satisfying click as the lids seal themselves .thanks for watching and taking the time to comment , i hope you make some , so nice on buttered toast ......

    Is there other way to skip three days of keeping elder flower mixed with lemon n water? Can it be possible to do in a day to make jam from elder flower?
