I make French Frye chop up some onion an pour the sardines over all give it a stir an eat, love it. Heat fish if u want to. I add oil also, add cayenne pepper.
The simple delicacy of eggs and fish for breakfast.... 45 some years ago, as a little child we camped often in the Yaak river area of extreme NW Montana. Waking at first light to stumble down to the river shore, bait an eagle claw #6 with a partial crawler and pull Eastern Brookies (planted invasive in the late 1800s) one after another made worthwhile the bleary eyed stumble to the river for our bounty. Add some O'Brien potatoes and you had the fire to catch the next batch for dinner.
Reminds me of creek side lunch in the 70's and 80's when I lived in PA. I'd fry some brookies, rainbows or browns from the mornings catch in a small cast iron pan and butter that I carried with me. Even had a small 2 compartment shaker for salt and pepper. That, and two Heinekens, and back out for the afternoon.

As someone who has been eating canned sardines every third day for over a year, I am going to try this on my next scheduled day. I usually make 2 eggs after I eat the sardines anyway. If I like it "I'll Be Back" for more. I think I am going to use my go to cheese, Kerrygold Reserve Cheddar, instead of mozzarella.

I just made this for lunch today. Delicious! However, my mistake was lightly browning the onions forgetting that once the egg/sardine mixture was added, the onions will continue to cook and caramelize. Still, it was very tasty. The Spanish - to prevent this or to prevent other ingredients from separating once it is flipped - mix the sauteed onions etc into the egg mixture and then back into the pan. Next time I make this, I will make it as shown...with slightly cooked or golden cooked onions. Definitely a repeat recipe. Great for the Ketogenic way of eating (which I follow).

Simply toast two pieces of sourdough bread. Spread butter. Mash a tin of sardines in spring water (not with tomato sauce). Add pepper and some chilli sauce. Onto each piece of toast spread the mashed sardines. Place each piece into an air frier and cook for four minutes. Enjoy.

After watching the video and reading the comments this is my version of the recipe: 125 g Salmon or Tuna or Sardines 2 eggs. 1 onion cut into small pieces. 1 or 2 Tbls Olive oil. 50 g mozzarella cheese. Step 1. Mix Salmon and eggs... Step 2. Cook the onion until soft, about 10 minutes. Step 3. Add the Salmon/eggs mixture to the cooked onions and allow time for mixture to cook -- 5 minutes Step 4. After 5 minutes turn the mixture over so both sides are cooked. Step 5. Add the 50 g of mozzarella cheese and cook for 3 minutes. Optional: Toast a tortilla and make a little taco out of it.

I will try this recipe. The ingredients are exceptionally healthful and the combination sounds unique and delicious. However, I'm going to use avocado oil instead of olive oil when I prepare the dish, and I recommend that others do the same. Always avoid using olive oil in high heat and frying because the olive oil oxidizes and becomes unhealthy. Avocado oil doesn't oxidize to the same degree and would be ideal and still tasty for this dish. When applying exceptionally high heat or frying dishes, I wouldn't use olive or avocado oil. For that, coconut (or palm) oil won't oxidize and will produce healthier dishes.
It looks great and I will try it, but the "sardines" you used looked more like a pair of smoked carp. When I make it, I will use one of the only two palatable sardine options: Tiny Tots or King Oscar.

I’ve had a salmon omelette before and was really good. It may not be too bad, however I would make it out because it may stink up the house.
