Caramel Dream Cake

For the Caramel Sauce
75 ml water
1 1/2 cups sugar
100 ml hot water
FOr the Caramel Goo
2 cups fresh milk
1/2 cup cream
5 eggyolk
50 g corn flour or cornstarch
1 tsp vanilla
60 g butter
1/4tsp salt

For the Chiffon Cake
2 1/2 cups cake flour
3 tsp baking powder
1/2 tsp salt
3/4 cup sugar
1/2 cup vegetable oil
7 egg yolks
1 1/2 tsp vanilla
3/4 water
FOr the meringue
7 eggwhites
1/2 tsp cream of tartar
3/4 cup sugar
For the white chocolate ganace optional
100 ml cream
290 g whitebaking chocolate
FOr the Shards
150 g baking chocolate melted +extra for drizzling
optional caramel sauce
