  • Gimbap
    Ingredients
    - 6 cups (1.4 litres) cooked short-grain rice
    - 500g (1.1 lbs) beef rump, cut into strips
    - 3 tbsp soy sauce
    - 3 tbsp oyster sauce
    - 1 tsp white pepper
    - 1 tbsp sugar
    - 1/4 yellow pickled radish, cut into strips
    - 2 carrots, cut into matchsticks
    - 4 eggs
    - 1 bunch English spinach
    - 2 cloves garlic
    - sesame oil
    - sesame seeds
    - salt to taste
    - 8 sheets seaweed paper (Gim in Korean, Nori in Japanese)
    Method
    1. Start by marinating the beef strips in the soy sauce, oyster sauce, white pepper, and sugar. Leave in the fridge to marinate for 1-4 hours. When ready to cook, heat a large cast-iron pan or flat-top until very hot, drizzle some oil, and fry the beef quickly, being careful not to overcook.
    2. To cook the carrots, simply heat some oil in a frying pan and sauté the carrots for 2-3 minutes with a little salt, finish with a little sesame oil, and leave to cool.
    3. To make the omelette, beat the eggs well, then in a non-stick pan over medium heat with a little oil, add the eggs and stir. Once the eggs start to thicken, leave to set and cook through. You don't want any colour, so keep an eye on the temperature of the pan. Once the omelette is cool, simply roll up and slice into strips.
    4. To cook the spinach, bring a large pot of water with a big pinch of salt to boil. Once boiling, add the spinach and cook for 1 minute before placing it into ice-cold water to stop the cooking. Drain well and squeeze all the moisture from the leaves. Dress the cooked spinach with some grated garlic and a drizzle of sesame oil.
    5. To season the cooked rice, add it to a bowl with 2 tablespoons of sesame oil, 2 tablespoons of mixed and toasted sesame seeds, and a pinch of salt. Mix well and leave to cool to room temperature.
    6. To assemble the Gimbap, place a sheet of seaweed paper onto a bamboo mat with the shiny side facing down. Next, spread the cooked rice across the sheet in a thin layer, leaving about a 2cm (0.8 inches) gap at the top of the sheet. Spread a small amount of each of the ingredients (spinach, carrots, beef, radish, and egg) across the centre of the rice, then roll tightly towards the top of the sheet with the gap, using a little water across the seaweed sheet to help it stick.
    7. Roll tightly, then rub some sesame oil on the outside to make it easier to slice. Slice the Gimbap into 8 even pieces and you're good to go!

The G in the beginning of words in korean tends to be stronger than a normal G, so it's something in between gimbap and kimbap for pronunciation! Lovely recipe mate!

You know, it's wild, man. That Korean 'ㄱ' sound? It's like a mix between 'g' and 'k,' kinda like how in Thai, you got 'ก่' (gor gai) doing its thing. And then there's Japanese with 'が,' Vietnamese with their smooth 'g,' and even Mandarin, where 'ge' (like in '个') kicks in with that vibe. Crazy how this sound pops up all over Asia, right?

Do you mean an ejective K? Because people who aren't familiar with the sound often hear G. The Tugela river is an example, its Zulu name is Thukela (startle; referring to a dramatic waterfall).

It looks laver(gim) is not the one for gimbap. The actual one the Korean use is much thicker(but slightly thinner than Japaneses maki’s) so it’s close to black, and has subtle gloss on one side. The kind of laver, the quality of sesame oil make a key difference. I wish I could send them to you!

I’m Korean but I also believe Kimbab is Korea’s take on Japanese sushi rolls. The clear difference between them is, I think, the preparation of rice. While rice for sushi is seasoned with vinegar, sugar and salt, that of Kimbab is mainly mixed with sesame oil and salt. Use of brown rice and black sticky rice is not a common practice for street type of Kimbap, but why not? The beauty of Kimbap lies in its versatility, allowing for various creative interpretations and experiments of different ingredients. I love your interpretation of Korean dishes. While they are quite authentic, your non-Korean perspectives turn our dishes into something more creative. 😍

    • @stevejung6470
      @stevejung6470 3 місяці тому

As a korean, i disagree that its a japaneae interpretation. Maki rolls were made popular to the global audience; this doesnt necessarily mean gimbap was an interpretation because to interpret something implies one is the originator and other an interpretor. One was just made known first and the other second. It has nothing to do with interpretation

  • @Communistslimited
    @Communistslimited 6 місяців тому +45

I am Korean and I agree that this dish is probably Korean interpretation of Japanese dish, Maki Roll.
Japan and Korea has been influencing each other extensively throughout history. Similar to this Korean dish Gimbap, many of Japanese favourites actually originated from Korea as well. (Yaki Niku, Mentaiko, etc).
Even for Kimbap, whilst the similar types have been around in Korea for centuries(hence the debate), current type of Gimbap appears to have been formulated and became popular when Japan invaded and colonised Korea. But that being said, historically it appears that Nori (seaweed wrap) was first discovered and eaten in ancient Korea first, so this dish has always been back and forth after all.

    • @user-sn2if1ph6s
      @user-sn2if1ph6s 26 днів тому

How can you lie so brazenly...
Were they mutually influenced by each other? The Japanese colonies?
For all intents and purposes, Kimba was influenced by Sushi, and Yakiniku and Mentaiko are both Japanese originals.
In the old days, Korean were so poor that they could not afford to eat beef.
Korea doesn't have enough history to think that something imported during the Japanese colonial period is original...😅

In Ireland a common lunch street food item is a chicken fillet roll. It's basically a baguette (somewhere between slightly soft but still a bit crusty), mayonnaise or any sauce of your choosing, lettuce,, shredded cheddar cheese, and a sliced up breaded chicken cutlet in that order. In any deli you'll have an option between plain or spicy cutlets, where the spicy flavour is in both the breading of the chicken and I think in a type of brine/marinade for the chicken as well. It's also typically a full chicken breast, not just an escalope. Give it a shot! I usually get mine with garlic mayo or with chopped scallions. You'll see people all over Dublin eating these for lunch, I reckon you'd like it!

I think the tradition of Korean rolls like this actually pre-date sushi? Japan was still forming from the indigenous people and Chinese and Korean settlers when Koreans were eating meats and veggies wrapped in rice wrapped in seaweed. Just like their clothes, language, architecture etc Japan had adopted older traditions from their neighbors and made their own form of it, creating a new tradition out of it

Would love if you made an Swedish Tunnbrödsrulle (or flatbread roll as it would be translated to English)
    ingredients:
4 port mashed potatoes or ready-made mashed potatoes
    1 small yellow onion
    1 bay leaf
    5 black peppercorns
    8 hot dogs
4 pieces of soft flat bread
    Mustard
    Tomato ketchup
    Boston gherkins (chopped pickled cucumber)
    Do this
Prepare mashed potatoes according to package instructions.
Peel and slice the onion. Boil water, onion, bay leaves and peppercorns. Let it simmer for a few minutes. Add the sausage and heat it over low heat.
Add mashed potatoes, sausage, mustard, tomato ketchup and Boston gherkins to the flatbreads. Roll or fold them.
