Add in your agar agar and mix well. 5. Using a syringe, pipe the strawberry mixture into silicone molds. Let sit for 30 minutes. Pro tip: If you let them sit for a few days, they dry leaving them with a concentrated flavor and chewier texture.
Cook the agar agar in the water and then add it to the cold strawberry mixture. That way you don't destroy the vit c and other vitamins that are normally destroyed by heat. If it would work.
Just to help anybody who is curious, if you change the pH with lemon/lime/citric acid/malic acid/etc you may need to use a different amount of Agar powder. Agar is very forgiving though because you can just reheat your gummies and add more to achieve the desired texture. (I learned this making acidified mandarin orange “roe” for a cocktail competition)

@seb__g33 I meant plant based as they don't use gelatin, which is derived from the boiling down of animal carcasses, mostly pigs. I don't have a problem with honey, but yes, maple syrup could be used instead.
@ericmagee9054 1/3 of a cup over 3 cups of total mixture isn't an insane amount. It's also a natural sugar. These are meant to be treats anyways, like cookies. It's pretty reasonable compared to other desserts. I'm sure you could leave the sugar out too if you wanted, but sometimes fruit isnt that sweet so the added sugar helps.

I’m going to try this. But 2 tips: get a strawberry huller tool because slicing the tops wastes a bunch of delicious strawberry and doesn’t remove all of the core. Also, if you spray the measuring cup with a vegetable spray the honey will come out easier.

Thank you for this recipe, I’m so excited to make them! If I have one suggestion, I’d recommend adding the elderberry without boiling it if possible. The boiling is likely to kill some of the nutrition from the elderberry syrup, it’s best to prepare it at lower temps.
I just made a batch of blueberry gummies this way - I would describe the texture as more of a firm jelly than a gummy candy right now, so I'm eager to see what they're like after a few days of drying out!
@@kaduku1112 I just laid them out on a baking sheet and set them on a counter with a fan pointed in their general direction for about a day and a half, and that seemed to do the trick. I was concerned about using a dehydrator because I was afraid even the low heat might have made them melty. As for spoilage, I haven't had a batch last more than a week, but I was keeping them in a sealed mason jar and they were just fine for that period of time!

I mean, honey is only slightly better than sugar and heating the whole thing up will turn the fructose into a processed sugar and kill most of the vitamins. It still has all the fibers, and maybe a few of the vitamins left thus making it less unhealthy than regular candy but i wouldn't call it super healthy, or healthy at all.

That's about 10g sugar/100g mixture. Haribo have about 56g/100. Def. more healthy but don't eat to much!

To be fair, a 100g of gummies is quite a lot. 10g of sugar is still high of course, but I'm honestly pleasantly surprised. Not to mention it's mostly natural sugars.
We made these yesterday. Conclusion: this is jello, not gummi. They're not chewy. Slightly disappointed, but will keep adjusting the recipe. Next time without lemon juice. This made it way too sour and the kids didn't like them.
Maybe try real gelatin, instead? I've had store bought vegan gummi bears before and they did indeed have a different consistency. So I believe, it's due to the plant based thickener. But thanks for the warning about the sourness, that's good to know in advance!

@@suzannevandoorn5628 Good luck experimenting! Another thing one could try is dehydrating them. Maybe as more of a fruit leather then, to speed up the process. Getting some more of the moisture out, might give them a chewier consistency. Maybe they're just too moist, especially when freshly made.

Any homemade gummy is helathy, also, gelatin is also healthy and I would even say it's better for your body than agar agar, gelatin is just cooked collagen, 100% natural
I had to google this. So: Excessive heat will definitely degrade the beneficial enzymes and also affect the flavor, but the temperature levels within the beehive can go up to approximately 95 ºF (35 ºC) and that means a little heat will not affect the ingredients in honey.
Did you use agar as a vegan option over gelatin? Or were you using it for a different texture? I’ve only used pectin and gelatin before; I’ve been curious about trying agar for some time now. Just haven’t made home made candies in like a decade now lol
@@DaveYognaut yeah but the sugar is from the honey. It doesn’t spike your glucose in the same way as table sugar. It even has the benefit of reducing blood sugar believe it or not. I wouldn’t want to eat half a cup of honey in a day or anything, but it can 100% be included in a healthy diet.
Blending the fruits with the seeds can add bitterness. You can cut or crush then infuse them in the honey for a cleaner flavor. But you will also miss out on the fiber content

Sure. Pure cranberry juice (the unsweetened kind) would also be an excellent choice. It has a very strong, tart flavor, but no bitterness at all. And it would deepen the color even more.
Would this work with frozen fruit? And other fruits? Bananas? Apples? I have a bunch of stuff in the freezer I need to use up, this could be a great way to use them!
Unless you're using raw honey (which is very thick and not at all fluid), the honey has already been heat treated. And if you are using raw (which is delicious!) the first step of using it is pretty much 'heat it up so it turns into a golden delicious fluid.'

If their claims of being 100% pure (which means nothing really since it's a given, at least here in the EU) are true, then being grass fed doesn't have any impact on the product. I'd be very careful spending a premium for such brands
If your blending them up you might as well keep the stem or maybe even put some of the leaves(since they have the most antioxidants) in there to make it even healthier

Did you strain the berries before adding them to the pot? Your mix looks very smooth. I had mine in the food processor for about 4 minutes and still had small bits of seed and skin that kept stopping up my syringe.
If your food processor isn't the most powerful then it would probably work better in a high speed blender. Or just strain it through a sieve that isn't too fine, just to get the big bits out but keep some fiber.

I mean, honey is only slightly better than sugar and heating the whole thing up will turn the fructose into a processed sugar and kill most of the vitamins. It still has all the fibers, and maybe a few of the vitamins left thus making it less unhealthy than regular candy but i wouldn't call it super healthy, or healthy at all.
Almost all Ingredients are 90% sugar in different variations... healthy 😂 but a few vitamins are in it after boiling it ... maybe

@@lunamorgenstern9107 some vitamins are more heat resistant than others. Any trace of vitamin c is certainly gone. Some others may have barely held on in small amounts depending on how long they were boiled
@@valikoest7981agar can take anywhere between 15-20 minutes to fully melt and dissolve when boiling. Plenty of time to destroy most of the vitamins

Not sure, if they would dehydrate well in that shape. You'd probably have to make a kind of fruit leather instead. But otherwise, they should keep really well, once dehydrated.

Pound of strawberrys ~ 25g sugar
⅓cup of honey ~ 50g sugar
Lemon ~ 5g
Elderberry ~ not sure maybe 2g
Agar - none (fake sweeter)
Let's be fair. 80g sugar overall on about 800g of mix. That's about 10g sugar/100g mixture. Haribo have about 56g/100.

To be fair, a 100g of gummies is quite a lot. 10g of sugar is still high of course, but I'm honestly pleasantly surprised. Not to mention it's mostly natural sugars.

We made these yesterday. Conclusion: this is jello, not gummi. They're not chewy. Slightly disappointed, but will keep adjusting the recipe. Next time without lemon juice. This made it way too sour and the kids didn't like them.
Maybe try real gelatin, instead? I've had store bought vegan gummi bears before and they did indeed have a different consistency. So I believe, it's due to the plant based thickener.

Another thing one could try is dehydrating them. Maybe as more of a fruit leather then, to speed up the process. Getting some more of the moisture out, might give them a chewier consistency. Maybe they're just too moist, especially when freshly made.

Oh, you can dehydrate with low heat - it just takes longer. Kinda like blowdrying your hair on the cool setting. But starting with as little water as possible and maybe a higher sugar content would definitely be an advantage 👍🏻

Excessive heat will definitely degrade the beneficial enzymes and also affect the flavor, but the temperature levels within the beehive can go up to approximately 95 ºF (35 ºC) and that means a little heat will not affect the ingredients in honey.

Neither, they will be waxy and gelatinous.
Blending the fruits with the seeds can add bitterness. You can cut or crush then infuse them in the honey for a cleaner flavor. But you will also miss out on the fiber content
you can use cornstarch too instead of a plant based gelatin, my mom uses it and made lots of fruit gelatin☺

Unless you're using raw honey (which is very thick and not at all fluid), the honey has already been heat treated. And if you are using raw (which is delicious!) the first step of using it is pretty much 'heat it up so it turns into a golden delicious fluid.'

I use grass fed gelatin from Perfect Supplements. Way better and a lot healthier..😊

They get their product from cattle raised in Brazil, so it's most likely a product of rainforest deforestation. I bet that "Green America" badge only pertains to the part of the company that's in the US. Don't fall for the marketing buzzwords
If their claims of being 100% pure (which means nothing really since it's a given, at least here in the EU) are true, then being grass fed doesn't have any impact on the product. I'd be very careful spending a premium for such brands
If your blending them up you might as well keep the stem or maybe even put some of the leaves(since they have the most antioxidants) in there to make it even healthier

@@Warmaka well, if one has diverticulitis you can't have whole seeded strawberries. Therefore the gummies are safer. Plus sometimes you have a craving for a sweet treat and forever chemicals are in twizzlers. I'm choosing the healthier route.

@@Nevario1 yes, exactly you have to run it through a strainer. I love to cook, bake and make my own versions of things. I don't do gelatin because of where they get it. Natural sea weed is awesome. This I can consume safely. So, if you want easy and you don't have health challenges, by all means, knock your socks off. But do not tell others how they should think and feel. About to make these for my daughter
Did you strain the berries before adding them to the pot? Your mix looks very smooth. I had mine in the food processor for about 4 minutes and still had small bits of seed and skin that kept stopping up my syringe.
If your food processor isn't the most powerful then it would probably work better in a high speed blender. Or just strain it through a sieve that isn't too fine, just to get the big bits out but keep some fiber.
