Infinite doesn't necessarily mean unlimited; this limit is clearly defined by the summoning jutsu's parameters, however being infinite within that limit just means they regenerate back to that limit after consumption. If you rewatch sasori ring recovery you can tell that they definitely had something planned for the rings, but just sorta abandoned the idea later.
