Judging by short spikelets second one is from Scirpus family(also called bulrush) while chufa/nut grass is from the Cyperus family and has longer weedier spikelets.

I would love to do a course to learn this out in nature I have look where I live no one knows any of this and no courses I would love to learn mushroom as well and medicine made by herbs Nechol Apelion has thing on her website but it not out in nature it on line. I want to learn out in the field in nature and see with my own eyes I'm in Wallaceburg Ontario Canada If you know a place where people can go see and learn for themselves In my area I'm in
