    INGREDIENTS
    ●140 g butter (at room temperature)
    ●140 g caster Sugar
    ●3 eggs
    ●225 g flour
    ●2¼ tsp baking powder
    ●½ tsp vanilla essence
    ●170 g sultanas
    METHOD
    In a large bowl, cream together the butter and sugar until light and fluffy.
    Add eggs and mix
    Add sifted flour, baking powder, and vanilla essence mix to create a batter.
    Add the sultanas and mix to ensure they are evenly distributed.
    Transfer the batter to your pre-lined tin and bake at 160°C for about 40-45 minutes until risen, golden, and a skewer inserted comes out clean.
    Leave to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
    Dust with some icing sugar and enjoy with a cup of tea☕️
