The Gordon Ramsey pony also called "Head Chef Pony" makes an appearance in the Season 10 MLP FiM comic. He has a kitchen called Tartarus' Kitchen, an obvious reference to the show Hell's Kitchen. They missed an opportunity to include a Delia Smith reference. I already knew that A.K. Yearling was an obvious reference to the Harry Potter author and "Daring Done" might be an indication to the real-life situation of her career stumbling.
There is a theory that Fluttershy and Pinkie Pie and AppleJack and Rainbow Dash are actually all just gender-bent versions of Two Iconic Animated Male Duo's: SpongeBob SquarePants and Patrick Star and Woody and Buzz Lightyear respectively which is ironic since both duos are voiced by the same actresses Andrea Libman and Ashleigh Ball respectively.
There are even more references in the comics in the last video you mentioned Mabel from Gravity falls but there are more Luffy I think from Onepiece and the Mr.potatoe from toy stories and more from old cartoons (issue. 42).
Wait, I just realized that Rainbow DASH 💨 is named after DASH 💨 from The Incredibles and her rival LIGHTNING ⚡Dust is named after LIGHTNING ⚡McQueen from the Cars Movies.

In "Viva, Las Pegasus" Gladstone seems to be based on both Elvis Presley and his manager Colonel Tom Parker. The animal trainers in that same episode were based on the Las Vegas duo of Siegfried & Roy. And I guess that you already covered Quibble Pants being voiced by comedian Patton Oswald?
