      Yeah, I noticed the same too. She also breathes way too heavily. Its the overweight now causing obvious health issues. Not trying to mock her, but this sounds when overweight person starts to get serious health issues.

      Maybe I'm just jumping to the worst case scenario but in a lot of the videos she almost looks like she's being forced to film them. Like that one situation where a young woman was kidnapped and forced to do health and fitness vlogs and shit like that.

    I've made a 'poor man's beef welly' a couple times (it's my spouse's favorite food, gods help me). I will say that you need an obscene amount of mushrooms because you're supposed to mince them super fine and simmer all the moisture out until it's crumbly. You're also supposed to wrap the beef in some sort of mustard and prosciutto as well as the mushrooms and pastry. And the pastry she used wasn't a puff pastry, which is why it looked a little weird and was so strongly flavoured. All that said, Kay did decently with this one, tbh, I'm kinda proud of her.

      I have been watching August's videos about carnivorous people, its not like im a vegan, still its not like im proud eating meat you know what I mean? well my sister is kinda proud and she reminds me of these people in TikTok, she doesnt say she's a carnivorous but u can tell she's kinda proud and wants to make a point, she wasn't like that before, now she literally cleans the bones and leaves them all around the kitchen for everyone to see?? I guess, but its becoming kind of "her thing", and I just started to notice she's trying to make a point, and the point she wants to prove is that she can afford meat everyday, like she's terrified of the idea of not being able to afford meat like thats the definition of being homeless?? it makes no sense, but she's clearly terrified of not being able to afford meat and maybe all these crazy extremist carnivorous feel the same way, also she wants so bad to be accepted in society as a distinguished housewife, (she has divorced 2 times, no men wants to be with her even if shes good looking), so now shes back at my parents house trying to look like a housewife who cooks meat and eats meat and that she's a normal housewife member of society

    I actually made a beef wellington about a week ago and it didn't come out the way I wanted (overcooked meat and pastry fell of easily) but seeing this made me feel so much better thank you Kay.

      Don't feel too bad about yourself. Usually beef wellingtons are very easy to overcook and its also hard as heck to get them wrapped in a way that it stays together. Even Gordon Ramsey can't make a perfect one, if that makes it better.

      Yeah it's easy to mess up, just takes practice and you'll just be able to feel when it's done. I don't follow recipes, never did, just do what feels right if you're experienced at least. Pastry will fall off if something is too wet or oily so that's probably where you went wrong, not a big deal. Gotta make sure to get all the moisture out your mushrooms, and if you're worried about overlooking meat, just sear it for less time or at a lower temperature. And that should solve all your problems, good luck next time, it'll get better don't worry

      Did you wrap it well in something salty such as Parma ham?
      That traps in the moisture so the pastry is less likely to fall off from being wet
      Edit to clarify: you put the duxelle over the meat and then wrap it in stuff like Parma ham after searing it so it only just colours up.
      Then you cover it in the pastry

    As a Mexican. We almost consider everything in meat pink as raw. It has bothered us so much to the point we mastered how to make a well done streak to be juicy and tender still with the best flavor. Since I grow up in a house hold where you never see pink in meat. We want everything looking cooked through.

    She made a standard "pie crust" (overly hydrated). For Beef Wellington, Puff Pastry is normally used. Puff Pastry is a laminated dough like croissants. Now one mistake Kay makes when it comes to Pastry making (besides putting too much liquid in it) is not placing it in the fridge as soon as a dough ball is formed. This allows the dough to relax and the butter to resolidify before being rolled out. For pie crust & puff pastry the dough must be chilled in order for it to puff up or be flaky, otherwise your butter will pool out of the pastry & sit at the bottom of the pan. But kudos to her for giving it a shot! Beef Wellington is alot of work!

      It's myoglobin. When the muscle fibers are broken down during cooking (the ones that make rare and very rare so dang chewy), they create myoglobin, which is perfectly edible. It's not from blood.

    My English Grandma would stab the roast beef joint throughout cooking in the oven.. it might have been in there for over 4 hours, who knows... every tiny bit of juice seeped out and evaporated.. no pink whatsoever remained.. it was not mooing , or saying "hiya , you alright ?" Yep, it was definitely dead...

    Cremated was my Grandma's choice...
    And now over to my French family !
    Step 1... place beef joint in oven with herbs for one hour.
    Step 2 .. take out of oven to rest for about 1/2 hour..
    Step 3.. slice thinly and serve ! Meat was saying " bas, bonjour ! Bon apétit ! Ça me fait plaisir "

    As a Previous baker...
    Kay's Pastries and baked goods are above average 9/10 times.
    Some errors happen with some videos... but if I had to choose anything from Kay's Menu, it would be her pastries. Pie Crust always looks good, Bread doughs are usually good, and delicate doughs like shortbread she does well. They might not be the prettiest cookies but they're made with love! and lard...

    I saw this vid go up on her channel and I'm always astounded by the lack of care/skill. I love that the finely chopped mushroom duxelles that she "cant get any smaller" still has huge 2" pieces of mushroom in it.

    As someone who enjoys all types of meat from rare to well, I can tell you that the more well done it is, it gets less chewy, almost more stringy. I can tell you that is ABSOLUTELY how some people like it. Plus, I’ve bitten into enough clearly undercooked burgers to know which of the places in my town you should ask for a medium when you want medium rare, for a well done when you want medium well, etc etc

    I grew up not knowing beef could be cooked any way but well done. I never had a medium rare steak until I was an adult. I couldn't believe the difference. My father, the well-done meat lover, never did grow out of the habit of needing it charred.

    I can speak as someone who prefers well done steak. It's a texture issue, through and through for me. Some people call "medium rare" steak tender. To me, it feels chewy, hard to cut, and unpleasant temperature wise. When someone calls "well done" steak chewy, I just consider it "done," easy to cut, and properly brought up to temp. It's about the texture. But at the same time, I am willing to acknowledge that this is why you're always asked "how would you like your steak cooked?" Because it's preference. I prefer my meat to feel like I'm eating cooked meat, not meat that still needs to be cooked. But that's me.

    For me the whole thing on why I dont eat steak rare is the mouth feel. The first time I ate a steak coooked at medium rare when I ate the actual pink bits it was all mushy and weird feeling to me, so I just continued to get my steaks medium well.

    I’ve made beef Wellington a few times and it can be difficult if you’re new to the cooking world. It’s just very precise and time consuming and Kay is doing it back ass backwards

      That's because a lot of people who cook them well done have no idea how to cook a steak and they get dry and chewy. Just tossing the meat on a heat source until you think it's done doesn't work. I cook steak quite a bit and have known a few people who liked theirs well done. They all seem surprised when I'm able to hand them a well done steak that still is very juicy and almost tender enough to cut with a butter knife. It's not hard to do once you figure out how to make it happen. I like mine about medium- very pink inside- but have noticed that a well cooked well done steak ends up with more flavor than a rare one. Cooking gives it a depth of flavor not present in still red meat. But it just tastes like booty if the person cooking either doesn't know what they're doing or is one of those "well done is like leather and I'm going to prove it" people who overcook the living hell out of it on purpose because they don't "approve" of the way others like their meat. Which is ridiculous.

    I've come across a guy named Lord of Patriarchy who runs a 2nd channel which seems to involve making his own cooking horrors. I believe the channel's name is Dave's Cooking Show or something like that. If you see horrid gloop, you know you've found the right Dave.
    Edit: The food often somehow is both overcooked and undercooked at the same time and I have no idea how the drunkard does it.

    I really like those meal delivery kit subscriptions. These people that are often lampooned here need to try it for a couple months. It really teaches the basics of cooking -- seasoning, reducing, flavor combinations, cooking meat to appropriate temperature, etc. that are the foundations of good cooking.

    Regarding: the pink meat, she was referring to the juices that ran out when she first put it on the pastry dough. It had some slight red coloring. Not sure why's she's making beef wellington if she gets that upset about a few red juices, though.

      To add to it, for peoples reference, blood would be far far darker red, mostly opaque, and well, if your meat was covered in blood it wouldn’t smell great. Blood in large quantities has a… let’s say unique odor to say the least.

    As a British person, I personally don't like my meat Pink, usually mid to well done but some of my friends do like it like that so it's very subjective
    Edit: I think what Kay was talking about was the juice that came out was Pink and seeped into the pastry, HOPE THAT HELPED, LOVE YAAA

      Yes, she was 100 percent talking about the pink juices that dripped onto the pastry. Not sure how anyone would not see that. The meat INSIDE would have been pink. You can sear something to charcoal on tbe outside and it still be raw on the inside.

    She saw the red(ish) juice on the plate and the pastry and thought it was blood, so she assumed the meat was still pink inside.
    She could be right though.
    It could be burnt outside and raw inside.

    4:35 I can't speack for all the well-done meat eaters out there, but here's my thoughts on it. I know you say it isn't raw. For you, and admittedly most people, it's easy to make the connection of it being fully cooked; That connection is not easy for me. This is the best way I can explain it: When you buy meat from the store it is pink and it is raw. This is the beginning of the mental connection of pink= raw. Even if I know it's been cooked and I'm seeing other people eat and enjoy it, my brain is still telling me that it is raw because it's pink. I physically can not bring the pink to my mouth because the color simply doesn't look appetizing. Thank you for taking the time to read, and I hope this helps. :)

    August, I think I can shed some light on the people who like well-done beef. My dad worked as a meat cutter in a grocery store. He didn't like meat cooked below medium because we couldn't get him to understand that the liquid running wasn't blood, so he'd freak out about not wanting bloody meat. Obviously this won't apply to everyone, but it can be the case for some people.

      I think its an age thing, i used to eat my steak moo'ing, but i like a bit of charcoal now. Or an alcohol thing, if u dont drink beer u might not like rare meat. Steak chips n beer.

      I don't like the taste of steak so if I do have it I have it well done (also because my gut doesn't like it pink). But I do think people get well done and overcooked mixed up. I can get steak that's completely brown inside and it is still tender enough, but I've also had inedible ones too, and they were overcooked.

    August! I agree with your garlic bit, as I am a culinary student, but here in Louisiana you’ll find that for some dishes people prefer to use pre-minced and for other dishes, you mince by hand.
