- The last season of Noma 2.0 is all about game meat and the wild forest produce. Chef René Redzepi and his team have come up with another groundbreaking menu that is both innovative and packed with delicious and interesting flavors. Expect exciting new ingredients like squirrel, reindeer heart, tongue and brand, pine cones, duck brain, and a duck breast served with the wing. But also caviar and truffle to make the taste buds go wild.

Anders thanks again for a fantastic peek into the Noma Wild Meat & Forest Produce menu! I hope you gave your muse a little time to compose herself before biting into the bug and the brain. That beetle was huge. In all honesty I would have tapped out.
Luckily, the beetle was made from berry leather and black garlic ;)

I like how a lot of the meat wasn't just breast, thighs or legs. They used brains, feet, wings, heart, etc. Less wasteful and makes for a unique experience.

Yes, eat wastes for the price of the best pieces! That's exactly what all those modern restaurants is all about. 20000% of added value. To pay 400 bucks to eat the chepest pices is so stupid. This menu is mental, I will never do that and no any normal person will. Thank you tube, you just saved me some money. 😊

Its not that much different than Kaiseki, which is the traditional haute cuisine of Japan, except this is the Nordic region's seasonal ingredients. Shut up with the its "all about the money" bullcrap. These people are trying super hard to radically change how people eat in that region, and redefine what Nordic cuisine is. Theyre also trying new ways of presenting vegetables too and they did that well. Theres a reason why Noma is number 1 restaurant in the world, and its obviously not about the money, its what their mission is theyre trying to achieve. So dont prejudge a restaurant if you havent been there.

The cinematography of your videos are stellar Anders! You channel definitely deserves way more subscribers. I understand many might consider the michelin starred restaurants to be pretentious... but just watch it as art! The way you shot Noma was what got me hooked to your channel!

Yeah, the Michelin-starred meals sometimes create a lot of controversies since people don't understand them and think they're just expensive and pretentious. That's fair enough if they are genuinely curious, then I try to answer questions and explain what those meals are like. Sadly, some just jump to conclusions and doesn't want to hear any other "truth" than what they've already assumed :)

It is stealth filming in a way, but I do use a camera for this. Sony A7 III. Small, but shoots high quality. No permission asked, though, it doesn't require more space or lighting than photography.

It's not about being cruel, it's about showing the animal behind the dish you are eating. Most people these days know meat only as something from a plastic bag in a super market. Thanks for the nice words!

They might be able to, but it would be a waste for vegetarians to go to a meat-focused menu. You should aim for the vegetable season instead. Geranium is also a much more obvious choice for vegetarians if you're coming during Noma's game & forest season, since their menu is basically vegetarian. Both restaurants are amazing!

The concept is to use all parts of the animals so there's as little waste as possible and more appreciation towards the animal. They have 2 Michelin stars and has been rated as world's best restaurant, so yes the food are definitely good

This video is wonderful. I love the silent movie storytelling through the imagery and best of all her facial expressions. I gotta say out of all the dishes the presentation that was a lil' 'trying too hard' and silly for me was the crispy duck wing at 5:00 . Although I think the aspect of seeing who prepared it and what they did for the dish was compelling. I thought the duck fat caramels at 6:18 were visually interesting. The dish with the most attention-getting/catchy name IMO was "Reindeer Brain in Milk Skin Pie." 1:31. My fave presentation was the sunflower salad made all the more compelling by the way it was craftily filmed. 4:41 .

I am a vegan and i was literally scared on how people could even eat that. I mean, I have seen plenty of different kinds of food especially in MasterChef AU but i couldn't stand this experience especially that duck brain and the wing meat.

bbllobi luke honestly, depending on the type of vegan, I’m sure some are incredibly happy that the entirety of the animals were used, not just the “normal” bits and the rest discarded. It’s far more respectful to consume every part of an animal and use every bit of it than it is to just take the most socially acceptable bits and discard the rest.

I think it's a garum made from squirrel meat. They do several garums there. David Zilber mentioned the squirrel garum on the book tour.

Noma is reaaaly pushing the boundaries this season. Watching this, it gave me the feeling of connecting with the vikings and the nordic forest, but at the same time it is very innovative and avant garde. Hope I can meet René soon.

Where would be a good neighbourhood to rent a place, cheap but not too far from the restaurant? And what's the best way to go around, is there a tube system or is it best by bike?
@@gab.lab.martins I am indeed based in Oslo. Check out the neighborhoods Grønland, Tøyen, and Gamlebyen. There's a tube systems, buses, trains, and boats. All public transportation. Plus city bikes.

This is a absolutely beautiful. Funny thing, my family is from Laos so I grew up eating duck heads. We would marinate them in lemongrass and sweet soy and grill them over a fire until they were crispy. The brains were ALWAYS the best part. Glad to see them being appreciated elsewhere.

It's a very common thing, and not expensive at all. The people in western countries are so fucked up they don't know simple thing anymore.
The bees store it in there hives. You get it by raising bees. It's easier to collect with a pollen collector on your beehive than extracting it from the capped cells.

Lukas Adamsson cooked in sugar for hours. Soft and chewy like caramel.
We paid 4500 kr. for 2 x menu + 3500 kr for 2 x wine menu, 2 x coffee, water and tips. So 8000 kr all up for 2 people

Outrageously wild plating. Toes the line of Emperor's New Clothesing, but with the benefit of whole animal and game use.
Believe me, there's flavor and complexity in each dish, not just a shocking presentation :)

@@andersandkaitlin I'm commentating from the perspective of the mind of elite chefs when pondering their wealthy clientele. There has to be some level of joy in convincing people that the best restaurant in the world can serve you duck brain from the duck skull, and that patrons can and do enjoy it. It's like a blend of concept art with a good bit of trolling. I would definitely try it for the experience, but how much farther, I don't know.

Oddly though, most of the people I know that have been fortunate enough to get tickets to this season have told me very polarizing things about this menu. I'd heard nothing but universal acclaim for the Ocean and Vegtable seasons. Did you guys enjoy it?
That's strange. This was possibly my favorite season. Close tie with the vegetable one. Seafood was my least favorite.

I had to skip the game and forest season but I'm going for the seafood season in February.

@@1Dss I loved all seasons, but I liked seafood the least. It wasn't but, just more weak dishes compared to the other seasons. I loved the wine pairing in the vegetable season, so I guess we have different taste in wine then. Yes, you can order from the wine list and they are very helpful in finding a wine that suits your palate. All wines are natural, but different styles.

@@1Dss I like good wines regardless of production method, but often natural wines appeal to me because of the light, juicy style. I didn't like the seafood pairing that much, but this and the vegetarian was very much to my liking :)

Anatomy class included. Probably just a tiny few steps shy of serving it right from dissecting room, or being prepared by the bear right after hibernation. But still, the aesthetic value is overwhelming, and this video captures everything beautiful beautifuly, not mentioning precise timing. With a lovely and brave young lady (as she is, I believe, the real gem in this video). Caligula would certainly thumb it up. And so do I, the poor slave of beauty.
