Everything looks delicious but I gotta say, foams have to be the most overused texture in fine dining. Yes, it tastes brilliant and it's a cool change of texture in an appetizer here and there, but having almost every course topped by some formless lump just isn't very nice if you ask me. What's the good reason to have the Ravioli topped with foam instead of mushroom sauce?

Foams are normally used for texture and intensity. And it isn't as straightforward as you say it is. As 75% of your taste is decided by your nose, it does make a big difference for the overall experience 😉.

I've eaten at Lasarte in Barcelona. It's extraordinary. The tasting menu was like nothing I've ever had. If you get the chance to eat here, I recommend it highly. We had this server and he was professional and knowledgable. She surprised me with reservations to Larsarte on our honeymoon and it was the most amazing culinary experience of our lives.

The most impressive thing in this, was the host. I assume there were other tasting courses and memorizing all of it along with the excellent service displayed is something one should be very prideful of. I also wish my local Denny's waiter knew what was in the omelets to this degree.

People might think this is unfairly served. Small portions expensive plates. But as a working class person, I know that this is a lot better than most American restaurants. These plates are cooked by professionals, artists, innovators. I bet you can taste all of the flavors that were carefully hand picked.
