Maltese Rustic Bread Recipe (makes 2 loaves) (ua-cam.com/video/Z_4DgvHhd24/v-deo.html) Ingredients 800g strong white bread flour 10g yeast 15g salt 500ml tepid water Method You can work the dough by hand but using a mixer with dough hooks makes it a lot easier. Throw all the dry ingredients in together, give it a quick mix and then start adding the water slowly, work the dough for about 3-4 minutes, you will notice a soft mix (it doesn’t need to form a ball), the dough will be mixed a second time later it which will aerate it and make it light. Use a scraper to pull the mix away from the bowel and form a sort of ball in the bowel and then cling film or use a damp cloth and cover, rest for an hour somewhere warm. The dough would then have doubled in size, using the dough hooks mix the dough on a high speed for a second time for around 5 minutes. Use a scraper to pull the mix away from the bowel and form a sort of ball in the bowel and then cling film or use a damp cloth and cover, rest for another hour somewhere warm. Heat the oven to max 250 degrees and put a cast iron pot into the oven to heat up for 20mins before the bread goes in. After the dough has doubled in size again for an hour, put a hole in the middle and pull the dough out onto a heavily floured surface and using your fingers and scraper fold inwards on itself and divide the dough into two balls as this recipe makes two loaves. Prod and spread the dough out with your fingers and fold into itself top, bottom, side to side 2-3 times then form a ball, repeat with the other ball. Put your loaves into the heated pot side by side, sprinkle with flour on the top and put a cross with a knife on the top of each loaf. Put the lid on and put into the oven for 30 minutes, remove lid and put back in uncovered for 20 minutes. Lift bread out of the pot and put onto a cooling rack without burning your hands and allow to cool, you will hear the bread crack which is normal. Enjoy!
