This week, Molly makes her Spiced Peanut Shortbread Cookies from her new cookbook More Is More- and they are not going to disappoint. Ingredients:

8 tablespoons (1 stick) unsalted butter, at room temperature
PROTEIN
1 large egg white
PANTRY
1 1⁄4 cups (178g) roasted, salted peanuts
3 tablespoons turbinado sugar
Kosher salt and freshly ground black pepper
1 teaspoon flaky sea salt
1 1⁄4 cups (150g) all-purpose flour
1⁄4 cup (50g) granulated sugar
3⁄4 teaspoon ground cardamom
1 teaspoon vanilla extract

Molly you were meant to be in front of the camera! Such a natural at making seemingly difficult techniques digestible for home cooks. Watching you makes me nostalgic for the shows I watched on the food network that taught me the value of learning how to cook when I was growing up. So happy for your success and so glad the younger generations have you to help them out!
I just made these cookies last night. They are unbelievable! I love the spice. I’m all for a chocolate break. This recipe is ready in 10 minutes before the chill step. It’s very quick. The log rolling technique is brilliant! I’m ready for a third cookbook Molly! I’m thinking the next book cover will be yellow.?? Can’t wait for it! This dough whips up in a zip with the food processor. It only took about ten minutes to get this dough in the fridge.

If I don’t have a food processor, would incorporating the butter into dry mix by hand achieve a similar texture?

Couldn’t get the dough to ever form. Just a wet sand consistency that wouldn’t hold its shape, and would just crumble. Added extra butter but still didn’t help… not sure what I did wrong
this is a great recipe, love molly etc etc but just a piece of advice i found it really difficult to form this into a dough with only 8 tablespoons of butter. I think adding one more tablespoon might make your life a lot easier!
1.5 to 2-inch circumference would make a hilariously tiny log -- please stick with a 1.5 to 2-inch *diameter*!
