White Chicken Chili

  • Hey YT Fam! This is another great video which features White Chicken Chili which is a great alternative to red meat. Have fun giving this recipe a try! Thanks for viewing what we do!
    Ingredients
    1 Tbsp. or more of Olive Oil as Needed
    1 Large White or Yellow Onion, diced
    2 Fresno or Jalapeños Chilies, minced
    2 lbs Chicken Tenderloins (Cut into 1-inch Pieces)
    4-5 Garlic Cloves, minced
    1 tbsp Ancho Chili Powder
    1 tbsp Ground Cumin
    Diamond Crystal Salt (To Taste)
    ¼ tsp. Cayenne Pepper
    2-4 Cobs of Corn (Kernels Cut from Cobs)
    2 (15-ounce) Cans Cannellini Beans (Drained & Rinsed)
    1 (15-ounce) Can Kidney Chili Beans w/ Juice
    2 Cups Unsalted Chicken Broth
    1/2 Cup Heavy Cream
    Tone's Cilantro Lime Seasoning
    Juice & Zest from 1 Lime
    1 tbsp Chicken Base
    Optional Toppings: Chopped Cilantro, Mexican Crema, Grated Mexican Cheese, Diced Avocado and/or Corn Tortilla Strips
    Step 1
    Season chicken with whatever you like. In a large skillet add the chicken and cook, stirring occasionally, until it is lightly browned on the outside. (Don't cook until done. Just brown only approximately 3 to 4 minutes then set chicken to the side on a plate to rest until ready to use in chili.
    Step 2
    In a dutch oven add the onion and jalapeño and cook, stirring, until the onion has softened, 2 to 3 minutes then add cooking oil.
    Step 3
    Toss the minced garlic and spices into the pot and turn a few times to coat the chicken evenly. Add the corn, beans, bean purée, reserved chicken, chicken stock and bring to a boil. Reduce the heat to low and simmer, about 20 minutes.
    Step 4
    Stir in the cream, lime juice & lime zest. In a bowl garnish with the desired toppings, and serve.
