Thanks for doing this. I'm doing this exact thing right now and yours is the only video on UA-cam that shows someone trying it. I'm thinking of adding some pork lard when I wrap it and maybe it will be less dry when I shred.

For that cut I’d probably smoke it until it reached about 140 degrees and cut it into chops. That’s a very lean cut. Best part of this video is you and your daughter. My daughter is 28 years old but it seems like 10 mins ago when she was 8 years old helping me out in the kitchen.
I agree, I normally would slice this but we wanted to experiment! And thank you, I love her in the kitchen with me. She's already growing up too fast. I know I'm going to blink and she will be all grown up.

Great job dad. I usually take mine to 140 before wrapping it. Like you, I prefer the shoulder, but wife and kids prefer loin.
