    Thanks for doing this. I'm doing this exact thing right now and yours is the only video on UA-cam that shows someone trying it. I'm thinking of adding some pork lard when I wrap it and maybe it will be less dry when I shred.

    Great experiment! I wonder...if the loin can be injected with like a garlic melted butter solution. Like lots of "budda"! Thanks for the family and instructive video.

    For that cut I’d probably smoke it until it reached about 140 degrees and cut it into chops. That’s a very lean cut.
    Best part of this video is you and your daughter. My daughter is 28 years old but it seems like 10 mins ago when she was 8 years old helping me out in the kitchen.

      I agree, I normally would slice this but we wanted to experiment! And thank you, I love her in the kitchen with me. She's already growing up too fast. I know I'm going to blink and she will be all grown up.

    Great job dad. I usually take mine to 140 before wrapping it. Like you, I prefer the shoulder, but wife and kids prefer loin.
