Looks sooo good! I think the sauce looks healthy especially if you used yogurt. Wish I could eat fried foods, but health reasons I can’t. If you can’t do fried you can lightly coat with a good olive oil and bake.takes a lot of patience to fry in small batches like that. I hope your family appreciates all your diligence in the kitchen!
I make roasted potato wedges all the time. Our family likes large portions and I must make 8-10 pounds of potatoes per meal. Her potatoes look delish but I would need an industrial fryer for our family.

When I lived in KY, We used to go to Long John Silvers every Sunday afternoon. I love me some of that yummy fish tartar sauce and malt vinegar, hush puppies, fries, and corn on the cob. Not close to a LJSs here in NC.

Love the aioli sauce! Never have deep fried anything before, always thought it was a waste of good oil. I think it would be just as good over plain old baked taters anyway, with a big salad. Yum!

When I was a school catering supervisor ( I live in the UK) one of the vegetarian options I offered was battered mushrooms, courgette ( zucchini) cauliflower, onion slices and broccoli, served on a bed of rice and a dish of sweet and sour sauce on the side to dip. Always popular
Sara got a tip for you from America's Test Kitchen when you're making homemade fries, get you a pot of oil leave it cold. Cut up your potatoes the way you want them stick them in the cold oil and bring it up to fry. Cook until golden brown Brown . They turn out perfect every time. Soft in the middle and crunchy on the outside. If you show people at home how to do this. this does not work with frozen french fries only fresh potatoes. This recipe you made looks delicious I'm going to try that too

We use an air fryer, no batter.
