Everyone knows A is for Apple, but why stop there? This is episode 16 in my series Fruits A to Z, where P is for Pineapple. I'm making different dishes focused on a fruit for every letter of the alphabet.
Ingredients

¼ cup(60g) butter melted
½ cup (110g)packed brown sugar
1 pineapple
Most of a 16-ounce jar of Maraschino cherries
Cake
¾ cup (150g) sugar
½ cup (120g) butter
2 large eggs
1 teaspoon vanilla extract
1 ½ cups (180g) all-purpose flour
1 ½ teaspoons baking powder
Pinch salt
½ cup(120ml) milk
Preparation
Preheat oven to 350 Fahrenheit
Pour butter into a 9-inch cake pan and grease the sides then sprinkle and spread out brown sugar
Peel, slice, and core a pineapple, arrange along the bottom and sides then dot with maraschino cherries
Beat butter and sugar until creamy, add eggs one at a time, and then vanilla extract and beat till creamy
In a separate bowl combine flour, baking powder, and salt
Alternate adding flour and milk to wet ingredients and mix with a spatula until just combined being careful not to overmix
Pour batter into the cake pan
Bake in preheated oven for 30 minutes then tent with foil and bake another 25-30 minutes till a toothpick inserted in the center has a few crumbs
Allow to cool for a few minutes then invert onto a serving dish
Served best day of while still warm but can be wrapped and stored for a couple days
Man that's a great looking cake! I've never seen one look that nice
