How to make Quince Jam | Fruits A to Z

  • Quince is a unique fruit that resembles an apple or a pear but is very bitter raw and hard yet delicious when cooked. Join me as I make quince jam for the first time and discover this incredible spread.
    Everyone knows A is for Apple, but why stop there? This is episode 17 in my series Fruits A to Z, where Q is for Quince. I'm making different dishes focused on a fruit for every letter of the alphabet.
    Ingredients
    3 quince (1 1/3 pounds) 620 g
    Sugar in equal proportion
    1 lemon(zest and juice)
    1 teaspoon cardamom
    Instructions
    1. Wash and cut the quince into small pieces. Place in a Dutch oven or large pot and cover with water. Bring to a boil and simmer for 15 minutes
    2. Strain the water reserving one cup to add back with the quince to the pot, add sugar, lemon juice zest, and cardamom
    3. Bring back to a simmer and cook for 45 to 50 minutes till thickened and ruby in color, blend with an immersion blender to achieve jam consistency
    4. Follow the proper canning procedure by ladling quince jam into hot jars, leaving ½ inch headspace, wiping the rims with a clean cloth then screwing on the lids and process in a boiling water bath for 10 minutes,
    5. Enjoy with toast, as part of a cheese board, or even with meats.

    Awesome! I hadn't ever heard of them until you mentioned it. Sounds really good and looks easier than I imagined it would be!
