Man, I love this idea! I’ve heard of poor man’s brisket before, but I haven’t tried it yet. I’m definitely giving this a go in the near future. Let me know how yours turns out and any tips you pick up along the way-I’d love to hear how it goes!

Hey what's up Keith, Question on the Weber Kettle Grill. do prefer the 22" or a 26" Kettle Grill or is it just a preference?
Also for the Ghar-griller Charcoal Grill is it best to have the firebox to use as the smoker? please let me know. I'm leaning some good lessons. God bless you

Hey Tim! Great questions! When choosing between the Weber 22” and 26” Kettle, it really comes down to your needs. The 22” is a fantastic all-around grill that’s more affordable, has a ton of accessories available, and is what I’ve cooked on for years. The 26” gives you extra space, which is great if you’re cooking for larger groups or need more room for two-zone cooking, but it comes at a higher price point, and not all 22” accessories will work with it. Either way, Weber makes quality grills, so you can’t go wrong.
As for the Chargriller Firebox, if you’re just experimenting with offset smoking, it can work, but understand that budget-friendly offsets have thinner metal and gaps that let heat and smoke escape. You may need to make modifications, like adding gasket seals, but even then, it won’t be as efficient as a higher-end offset with thicker metal. If you’re serious about offset smoking, you may want to invest in a more premium model. That said, the Smokin’ Champ is a good starting point if you want to get your feet wet.
Hope that helps! Let me know what you decide.
