im from Montreal and used to eat onion soup au gratin a LOT when i lived there. the bread was always cubed whatever restaurant we went to. good on you for figuring that part out. i love the bagel idea. and less onions is fine by me too because it's all about the broth soaking in the cheese covered bread for me. the one thing that i will do differently because it's how the restaurants always made it and it's delicious is: i will put the soup in the bowl first, put the bagel cubes on top of the soup, put the cheese on top of the bagel cubes. and i'll also let some of the cheese go over the edges of the bowl because ... that is the onion soup signature! i also wont put garlic in it. lol. but your recipe looks delish and i cant wait to try it. thanks for sharing!
But they did come out amazing to make keto everything bagels with oat bran and wheat gluten ... It only takes 3 days because you have to let the bread boulay rise and you make your bagels and let them rise then you have to boil them in water with baking soda a minute on each side and then you bake them

We have a recipe for keto bagels, and there is also a product called Zero Carb bagels, though these last ones contain wheat gluten, so it would be zero carbs, but not strict keto. Our home made version is strictly keto.

What makes me want to try this is that no sugar was used.

I took keto Kings recipe for making keto buns and turned it into my keto bagel recipe but it does take 3 days to make them

Sure! We just tried to make it as much like French Onion soup as possible! But it would be delicious both ways.
I used fried pork rinds instead...don't let them get soggy...just as you spoon in with cheese add it
