I was told as a young teenager, that the way to stop the tears flowing when chopping an onion, was to place a ring of onion on top of you head. Which I did religiously, and it worked -I never cried. Fast forward to when I was married, my husband caught me chopping onions one day, with a ring of onion on my head. He laughed till he cried, and told me I had been duped for a joke ..... that it wasn’t true. From that day onwards, even putting a half onion on my head didn’t work many more. Silliness aside! I had never chopped them this way ever, and especially the dicing always has been a pain, as it’s hard to hold the onion together towards the end. So I will learn this way from now on.

    Two other things, as well-
    A. Most of the "Make you Cry" juice is in the dense root portion. If you avoid cutting through the root until the very end, then throw it away immediately, you save yourself the tears.
    B. The fumes make you cry because they bond to the moisture in your eyes, as the largest source of water nearby. If you chop near a running sink, or wet your hands, the onion, or the knife, those fumes go elsewhere and won't make you cry.

but what does jamie mean by "without using crystals?" are there magical onion-cutting crystals that i am not aware of? WHAT DOES IT ALL MEAN?!

    • @Mowgesh
      @Mowgesh 9 років тому +168

poppy p. There's no such thing as crystals that can "physically" cut onions. What Jamie is referring to are holistic crystals most commonly found in healing and gypsie shops. Different stones have different energetic properties. For example, a Tigers Eye can aid those seeking clarity, while Lapis Lazuli is said to expand our awareness in onions. Crystals were most commonly used in onion awareness since the sixteenth century, and some even use them to this day. However, this video proves that there are ways to cut onions (albeit less effectively) without the use of holistic crystals.

The sharper the knife, the less the onion oils fly all over the place - also, if you use a sawing motion, rather than just cutting straight down, the oil dispersion is less.

Some food chemistry for you guys. Onions contain sulfur compounds and typically for sulfur compounds are their fragrance, sometimes even. stench. When chopping yellow onions there is an enzymatic transformation. A sulfur compound is converted into volatile water-soluble compounds. When they dissolve in water, for example tear fluid, it forms sulfuric acid. If you want to reduce the tear flow, you can cool the onion in ice water before you start chopping it. The enzymes activity decreases at lower temperatures. You can also make sure the onion is wet when you chop it. The volatile compounds can then settle in the water and do not end up in the air to the same extent.

If you act fast you may still find Victorinox Fibrox chef's knives at regular kitchen stores. America's Test Kitchen's latest test still gives them their highest rating, but they report that Victorinox is moving the Fibrox line to "commercial" markets and introducing a new...inferior...line for the retail market. The new line uses the same blade, but has a poorly-designed handle according to the testers.

I love Jamie but Gordons method looks neater even though they are practically the same.

Maybe because Gordon is a professional chef, while Jamie isn't. But he still chops them beautifully.

And just like Gordon, Jamie's expert status is invalidated by his recommendation of horizontal cuts into an onion. Pointless and dangerous for the knife-skill neophytes.

Google horizontal onion cuts. It's just another perpetuated, pointless kitchen technique. Compounded in this case because if you don't already know how to chop an onion, you are likely not great with a knife, and shouldn't be making decorative radishes... or unimportant horizontal cuts in onions, directed towards your fingers. giulianohazan.com/blog/the-easy-way-to-finely-chop-an-onion-2/

your statement is geometrically invalid. the layers of the onion become horizontal in the thicker central area, but at the two sides the layers get vertical, and therefore you can get large chunks of onion from there if you don't do a horizontal cut (especially when the onion is huge). but since you are 'afraid' of doing that, there are some options for you:
      1. first cut the onion not in half, but in a smaller spherical cap, so that the layers tend to stay more horizontal.
      2. first cut in usual hemispheres and then make the finest vertical cuts you can, so that the 'verticalness' of the side layers is mathematically diminished.
      2. first cut in usual hemispheres and then make radial cuts towards the center similar to your linked video. funny thing, that's more dangerous and time consuming than making a single horizontal cut!

***** you can research horizontal cuts, and you can learn from experts on the web.
xeniosm my geometry is fine. Do a web search!

You're doing it wrong. Don't do it this way. Look for Gordon Ramsay's video, it's much better and quicker.

the horizontal cuts are a waste of time and dangerous. Try it with and without - the results will be identical.
