This may sound crazy and it certainly looks weird, but I've mastered the "onions tears '" !!!! Yep i just wear my pool goggles when I cut my onions and I never shed a tear.It works perfect ! ......your welome ! 😄
You are So AMAZING! You are a Wonderful Teacher!! I’m a retired Teacher, who wants to be an awesome “Chef “ for my Family! Thank you, Thank You, Thank you, Billy Parisi, for your teaching and Fabulous Recipes!!!❤😊😊😊
Thanks, Billy, your instructions are easy to understand and follow. I just subscribed to watch more, and oh, my takeaway here is that I need to learn about knives and probably buy a good set.
For those who are home cooks Or if you're just cooking If possible While you're prepping your food, put your onions in the refrigerator At least 20 to 25 minutes Beforehand You may be able to go a little bit less After working in kitchens And cutting up those Eye burners It really helps 🎉❤
Im loving all of your videos! I cannot decide on a good chef's knife. I'm using a vintage set of knives that work but I really want to step up. Any recommendations?
Handy video but I'd challenge your instruction to cut off the root end when dicing. Based on my own experience as well (as watching several other UA-cam Chefs) it really helps keeping it on to stop the onion bleeding (helping with crying) as well as keeping it much more stable while you do you horizontal slices before dicing
I agree. When i retired, I gifted myself a week at the Culinary Institute of America to attend the Basics Boot Camp. They taught to leave the root end intact. It actually provides kind of a handle to hold the onion while you cut.
Great video!! I have also tried leaving the root and slicing lengthwise instead of thru the middle and it helped me immensely!! No tears for me. How about an updated video to let others know Chef?
I'm going to try the method you showed for small chopped onion pieces. Fingers crossed I don't lose any....I'm cooking today to give my husband a break since he is the cook here and I don't want to bother him with any questions so I looked you up. Thanks for your video.
To prevent tears, put the onions in cold ice water for a few minutes before chopping, and/or make sure your knife is very sharp to prevent the juices from extracting. Orrrr you can also put on goggles😂😁it sounds silly but it works👌🏽
Thank you for your wonderful videos and sharing so much honesty Cutting Edge culinary information bringing heaven to our taste...Tearless onion chopping... I got something for you... If you cut your onion near running water such as a tap it will eliminate tears. Method 2. Cut the end of an onion, the root end and put it on your head while chopping onions this will eliminate tears seriously just try it
If you cut the onions right under the stove vent while it’s turned on, the fumes go right up and not into your eyes! It works for me!! Less tears or no tears
I don't knownhow true this is but I read that if you use a sharp knife and speed, the tearing is less. Bruising instead of slicing clean causes the gas. I only cut one onion when cooking bc it's just me and the wife and I never have a problem. Give it a shot.
I think you should indicate at some point that the longitudinal (cut with the grain) julienne will be less "onion-y" than the latitudinal (crosscut) julienne. The crosscut releases more syn-Propanethial-S-oxide; that is, the stuff that makes you cry. It also releases more of the other chemicals that onion up a dish.
I worked at a steakhouse for five years and always cut vegetables near the walk in box. When I had an onion cry, I went into the walk in and stood with my face in the reefer blower air stream. As far as knife sharpening, it generally isn`t always necessary to sharpen them. I have a couple of washer hones and a kitchen steel that I use, as a kind of "iron" to touch up the edge. The knife blades last much longer that way.
Good introduction for how to cut onions, only thing is what I see almost every youtube cooking videos is what they first teach in cooking school , take off jewellery , watch , bracelets and wedding ring.
Thanks so much for these awesome tips! You are a Wonderful Teacher and I Save ALL OF YOUR VIDEOS!! My daddy’s nickname was Billy! He was a Great Cook And So Are You Billy Parisi!!!♥️👏👏👍
Saw a vid that said to put a wet napkin on your cutting board as you're cutting the onion. It will prevent you from crying. I was doubtful, but tried it, and it worked.
Don't cut through the dirty, papery skin of the onion with the same knife that will produce the finished cuts. Peel the papery skin and first few layers with a paring knife. Great cuts. Nicely done video.
Okay, watching this raises one question for me: what knives do you use and why? I know it’s always a controversial question with cooks, but you know... the more you know...
I know this might sound crazy, but have you tried using a bowl of water to help prevent tearing up while cutting onions? It's been two years since this video, so you may have learned some new techniques since then. Personally, I find that having a bowl of water next to me always helps, and I never tear up when using it. I'm not sure why, but it seems to work for me.
Put your onions in the fridge let them cool before cutting them to stop the onion tears. I used to slice bags of onions too this trick almost stopped the tears completely
For anyone looking for that foolproof way to cut onions without crying, get yourself an old pair of ski/snowboarding goggles and keep them in your kitchen. They are now your onion cutting goggles.
you could just try squints in-between the cuts once you get going since you generally know and can feel where the knife goes and can avoid onion squirts flying into your eyes or that spicy water getting picked up by the air/nose. Seems to work as well but might not be as effective.
Bingo!!!! Someone told me that wearing contacts helped, but I wore glasses. Eventually I got contacts and it rocked my world. Not only could I see but I didn't cry when cutting onions.
3:11 Only one real method is swimming glasses/diving mask. You need to isolate surface of eyes from aroma molecules of onion. Maybe fan that will blow away aroma also will help as much as heavy breathing.
there is a way to cut onions without tearing up actually there is a section most ppl commonly call the "head" atleast where im from all you need to do is not cut through it
Love that you showed us some basic fundamentals of cutting! Thanks!
for home cooks, if you keep the onion attached to the root on either side it will not bleed as badly, reducing tears
thanks cammmmm 🫶🏾🫶🏾🫶🏾🫶🏾
Also, keeping the root on will help keep the onion together for slicing. But if you want to avoid tears all together, get some swimming goggles.
Not true, if you cry while cutting an onion your knife is dull. Sharp knife = no tears
exactly, i always avoid cutting the root
Put it into freezer for 15 minutes before cutting

How did the algorithm know how much I need this? Just yesterday I spent 30 minutes on one red onion. I messed it up so bad!
😂😂
It happens
Practice makes u perfect keep trying
The worse. You just want cut onions, but they choose violence! 😂
Needed this!!!! Thank you chef!
Im loving all of your videos!

Thank you for this video! (You aced knife skills in culinary school, huh?)
I tried!
I pretty much julienne all my onions always. Love that juli!
you are amazing happy to find you love to cook

Thank you! The;I sharpened knives I have had for 40 years, caramelized the onion and made the potato soup recipe! A trifecta!
Very nice 👌
I see hopefully this will help me when it comes to cutting onions again.
Love this! Thanks for sharing
Damn thank you!! Been thinking of doing some onion rings and wanted to know how to cut them in circles 😁👍🏼

I must be unique because an onion has never made me tear up. EVER! I’d bet my house on it.
I like this video.Thank you so much💖💖💖💖
Thanks for watching!
Super helpful. Thank you
Thank You❣️
I can't tell you how nice it is to have a couple of double sided whetstones.
absolutely!
If you cut the onions right under the stove vent while it’s turned on, the fumes go right up and not into your eyes! It works for me!! Less tears or no tears
Chilies too 🌶️
Excellent tips!

Thank u very much for the tutorial! I didn’t know how to cut a purple onion and now I know thank you!💜💪
Great video!!! Thank you!!!
Thanks for these great onion cuts!!! Been looking for a video like this for so long
Hi chef I just discovered your channel. We are going to get along just fine😂 thanks for the upload it's like having my own private chef in the kitchen
great guide thanks
Excellent information brilliantly presented. 😂 ty😊
thank you
Eat a slice of bread while dicing an onion.. read it somewhere, gave it a try, wiped the final tears out of my eyes and got through the rest 🤗
Nice one thanks for sharing ❤
0:40 How cute is that?🥰
Omg Chef you're bringing back bad memories lol. Worked in a restaurant when I was young and cut finger ugh. Not using my learned skills lol.
Thanks!
No problem!
Cutting onions is my nemesis. Thank you! But also if your knife sucks all of these basic cuts are difficult. Lol
In professional kitchens, the most junior cook gets to cut onions all day long, unless someone screwed up big time. It never really gets pleasant.
all about that sharp knife!
I don't knownhow true this is but I read that if you use a sharp knife and speed, the tearing is less. Bruising instead of slicing clean causes the gas. I only cut one onion when cooking bc it's just me and the wife and I never have a problem. Give it a shot.
2:28 I am literally crying right now as I am cutting onions ..what timing
I always light a candle before I cut an onion. It burns while I cut and I have no tears. I have never had it fail. ❤
I’ve noticed that when I store onions in my fridge, I don’t tear up when cutting an onion!
Man that was so great. Never knew 🙂🙂🙂
Thanks for watching!
Age-old hack for no tears while chopping onions. Light an unscented candle right next to your cutting board. Works every time (for me at least) ;)
Please make the same video for mushroom cutting🙏 thank you sharing
Check out my mushroom soup
I wear swim goggles when chopping onions lol no tears!

For avoiding the eye burn, set a literal powered fan next to your cutting board. Weird? Yes. Does it absolutely work? Also yes.

definitely.

Hiiiiii
If I'm wearing my contacts while cutting onions it helps. I don't shed a single tear.
I find wearing contacts helps to not have tears. Great side effect
Put lemon juice on your cutting board to prevent crying.
You are AMAZING! And a Wonderful Teacher!! Thanks sooo very much!
Saw a vid that said to put a wet napkin on your cutting board as you're cutting the onion. It will prevent you from crying. I was doubtful, but tried it, and it worked.
You have great arms for basketball!
What is the carbon steel knife you use?
aura
2:27 solution to onion tears: swimming goggles.

I wish I knew the make and model of your mandolin
Where can I buy those nifes at??
Why did you not leave the root end on to keep it all together?
I cut the root annd tip off, throw them in a sealed container and then chop the onion.... i also wear contacts. I never cry.
It would be helpful if you showed your hand holding the knife with the hands motion for each of this cut
I put on swimmers goggles and that keeps me from crying. Fool proof.
For anyone looking for that foolproof way to cut onions without crying, get yourself an old pair of ski/snowboarding goggles and keep them in your kitchen. They are now your onion cutting goggles.

Gorgeous! Love your technique! I wonder if wearing goggles 🥽 will help eliminate tears 🤔
Lol
Yes it does, ,, that's exactly what I use !!lol
Onion is essential bc it's used to flavor so much and it can be used all ways from small to big, I prefer big chunks
I find that if I wear contact lenses I don't tear up at all. :)
Bingo!!!! Someone told me that wearing contacts helped, but I wore glasses. Eventually I got contacts and it rocked my world. Not only could I see but I didn't cry when cutting onions.
If you just so happen to wear contacts, your eyes won’t tear when you cut the onions.
Also leaving the root and cutting also prevents your eyes watering
I can't be the only one wondering why John Oliver is teaching me how to cut onions LOL
The trick to cutting an onion without crying, is just don't form an emotional bond. ;)
😂😂
3:11 Only one real method is swimming glasses/diving mask.

To not cry while cutting onions , we used have a toothpick in our mouths , weird phenomenon but it works
Don't cut the root off and the onion won't bleed and if that doesn't work use ski googles:) great video:)
Is there a school for cooking
there are a quite a few.
I am in jamaica and I like cooking but I don't really know much about it that
Do you think that the one in my area?
Washing the onion tends to reduce the tears when cutting. It removes the sulphar that makes you tear up.
To cut onions without tears is to run cold water while cutting!
I've never cried while cutting onions, then again CS gas didn't really bother me either when I was in the Corps. I'm naturally immune I guess. Lol
Chef cuts onion across from the grain, to have more onion oil to flavour the dish. CooK cuts onion in many ways, mostly along the grain!
Small Dice are 1/4 inch, medium dice are 1/2 inch, Large Dice are 3/4, and Julienne are 1/8 x 1/8 x 2 inches
Why do some chefs say not to chop the root of?
to hold the onion segments in place while dicing.
Graham Kerr, in the 60e, said to freeze it for 10 minutes. Also heard to hold a piece of bread in your mouth.
I'll have to try that out.
Perhaps freezing it makes those chemicals from the onion less volatile.
Placing a cup/bowl of water next to me prevents my eyes from irritation when I cut an onion. I learned this from somewhere else on the internet.
❤️👍❤️👍❤️❤️
❤
there is a way to cut onions without tearing up actually there is a section most ppl commonly call the "head" atleast where im from
all you need to do is not cut through it
Too prevent from crying when cutting an onion, run the onion under cold water!
I run my onion under cold water. And the smell I use lemon 🍋 juice or put in the fridge
You hold it with your thumb and pointer and go at it with a hatchet
