Homemade Crème Brûlée

  • RECIPE!
    Ingredients
    - 4 cups heavy cream
    - 2 tsp vanilla extract
    - 6 egg yolks
    - 1 cup sugar, 1/2 cup in mixture and 1/2 cup for crust.
    1. Heat heavy cream and vanilla extract in a sauce pan until hot, but not boiling.
    2. In a medium bowl, whisk egg yolks and 1/2 cup of sugar until well mixed. Pour in the hot cream gradually, mixing continually.
    3. Place 6 (7 to 8-ounce) ramekins into a large roasting pan. Pour hot water into the pan to come roughly halfway up the sides of the ramekins.
    4. Pour the egg mixture into the ramekins and bake at 325˚F / 165˚C for 45 - 50 minutes. The crème brûlée should be set, but still a little jiggly in the middle. Remove the ramekins from the roasting pan, allow to cool to room temperature, cover with plastic wrap and refrigerate for at least 2 hours and up to 3 days.
    5. Remove the crème brûlée from the refrigerator for at least 30 minutes before browning the sugar on top. Spread a tablespoon of sugar on top of each crème brûlée. Using a torch, melt the sugar to for a crispy top. If you don’t have a torch, you can broil the crème brûlée to melt the sugar. Keep an eye on it, to make sure you don’t over cook it.     Some tips when making ya creme brûlée (because I have an addiction to it):
    1. This recipe calls for a bit too many eggs, try out 5 instead of 6
    2. Put that whisker on the lowest setting possible, you want the least amount of air in your creme brûlée to give it that nice, rich texture. (But still combine those ingredients pretty good)
    3. Don't overload the sugar on the top, its nicer to have a crunchy top than a grainy one
    Some tips for the more technical person:
    1. Use a vanilla bean instead of vanilla extract for a better flavor (3 tsp of vanilla extract = 1 average vanilla bean)
    2. Place a towel under the ramekins when they in the water bath
    3. Have chilled cream and room temperature eggs
    4. Use cane sugar for the top to get a better crunch

      I’ve only had cream brûlée once, in a nice restaurant years ago. It’s one dessert I’ve never forgotten. I’ve never seen it in a restaurant since- I live in a less sophisticated area! I had assumed that it would be very difficult to make but it is a high end custard. Looking forward to making it!

    Pro tip: If you dont have a blowtorch dont worry, just heat a spoon and gently press over the sugar to create the crust

      Flo the eggs thicken the dish, so fewer eggs means a thinner creme brulee

      @@ExpiredCartonOfEggNogg no, I tried this recipe with less eggs and it turned out way creamier...the one with 6 eggs was less creamy and more set cause it has too much eggs...it ended up tasting eggy. But it depends on the size of egg

      Vanilla sugar works. If not, you can skip it. It adds a nice touch but it is totally unnecessary.

      Use a Vanilla bean, just split it open and scrape off the inside into the heavy cream while heating it and stir.

    If you go the broiler route to melt the sugar, make sure to let it cool before serving it or it will come out soupy. The one we had a day later tasted the best because it reset to a solid custard.

    I used a little bit more vanilla and used the double boiler, I think it gives a bit more...something. I also used a quater cup white sugar and an 8th(half a 1/4 cup) of brown sugar. Light or dark works fine either way tbh.
    And I reccommend only sugaring if youre gonna eat if directly after. If you sugar it and end up putting it in the fridge after you do the brulee it gets soft and kinda gross in texture.

    I watched so many videos and right after 5 mins I was done.     Followed the recipe to a T and after refrigerating them for 4 hours they were a little loose. With the consistency of thin pudding. Will it thicken after I sprinkle on the sugar and use the torch or should I put them back into the oven for 10 more minutes then put them in the fridge again?

    4 cups of whipping cream is too much. Both times i tried it i ended up with running creme brulee tried another recipe with only 2 cups and it turned out great.
