Maybe she was guessing the price for 4 servings in a restaurant??? Depending on where you live, restaurant desserts are around $5/serving at cheap place and $10 at a fancier place.

In my city, average prices are high enough you'd rarely find desserts for less than $10. If we want to start talking about gourmet, boutique, or fine dining, and you're spending $100-500 per person, paying $30 for dessert is not surprising. And this could be for something as simple as a slice of cheesecake, but the ingredients themselves justify much of the price at any reputable restaurant. There's absolutely nothing wrong with never paying those prices, high cost doesn't necessarily make food better, and its really hard to justify a $10 taco, over a real $1 street taco. But you'll never find a tomahawk steak for $15.

Quick tip on Crème brule. For the toping you can take a spoonful of sugar and place it in a small frying pan with a small drop of ether honey or corn syrup and let it melt until slightly dark and pour it over your desert.

Made the Ricotta Mouse. I like mine super dark and rich so I added another scant 1/2 cup of melted, unsweetened chocolate. Also added a little vanilla extract and only used 2 tbsp. of coconut sugar. It tastes amazing! I am going to top it with chopped pistachios and toasted, unsweetened coconut. Thank you for the inspiration Josh!
The best rice pudding I’ve ever made has been done in the same pan. You get the starch from the rice to help thicken it. When you incorporate vanilla paste and cinnamon that adds that extra something.
One additional step will take the rice budding for the next level , put in ceramic plates as he did with cream purel and put it in the oven until the top become brown and tasty.This is the original Egyptian recipe😋
Take those leftover egg whites, whip them to stiff peaks, add a little sugar and vanilla. Use a large star tip to make cookies. Pop them in the oven set as low as it can go for a couple of hours until the meringues are dried out on the outside and marshmallowy on the inside. BAM, fourth dessert.

If you switched the rice to Basmati, and replaced the vanilla with some green cardamom, and (optionally) remove the cinnamon stick, you’d get a very common but delicious Indian dessert called “kheer.” It has cashews, almonds, and raisins in it too, in different combinations or all at once. You should try it Josh!

It would be great to know how to coax the most flavor out of some of the lesser used, more economical cuts of meat. Could the fat that rings the edge be cut off and frozen and rendered into lard when there is enough to mess with it?

For the crème brulee: next time place them in the oven first and add the water then. A lot easier and safer.
