Lifelong Texan and this was staple years ago but I had forgotten about it! I was young and loved it! Cant wait to try it tomorrow when our son comes by! He wants fried salmon and Mom’s creamed potatoes and cornbread! I saw your fried okra post and decided on that! He loves what i call dish pan salad ( you cut it up in an enamel dish pan and use all veggies in fridge) and homemade sweet cornbread! May not be proper healthy food but he doesn’t get to come often! I was thinking I would make a chocolate pie and now I’m in a quandary! I want to cook this but chocolate is his favorite and our hen eggs make such beautiful meringue! I guess I will wait until Wed to do this one because he will take leftovers home! Lol
You had me at oatmeal ❤ you mentioned lunch room ladies. I grew up in South Carolina and many of the lunch room ladies were neighbors and went to our Baptist Church and boy could they cook. They were like mommas at school. They took great care in all those wonderful meals from scratch they made… I was lucky to have great homemade lunches for 12 years. My kids and grands are not as lucky with the so called school Lunch nowadays . It’s like they done away with hot lunch at many schools . They get junk food(pizza,etc)and cold lunches🥲 Some of our kids would benefit today with a great home cooked meal. I wish it was mandatory. It was in the south when I was in school not sure about other parts of the country. God Bless all the wonderful lunch ladies . We were so lucky❤
Yeah, I grew up and still live in South Carolina. I went to a small elementary school that only went to the 6th grade. The ladies who worked in the lunch room were all local ladies, friends and neighbors and yeah they could really cook. The very best turkey dressing I have ever ate was what the lunch room ladies made. This was in the late 60's to early 70's.
Grew up on the west coast and we had the option to buy school lunches in elementary school. There was a full kiisnd they made the food there. We got a schedule ahead of time so if u liked what they had I could buy lunch And other times I brought from home I'm pretty sure in junior high and highschool we could still get school lunches. When my kids were in school they had the food brought in.
Cooks at St. Peter's Hospital in Helena, Montana were baking this back in 1976. It was a favorite with staff and visitors to the cafeteria. I had gotten the recipe from them but somehow it was lost. Thanks so much for printing it here!

I believe the recipe I made was a request made by a reader of Gourmet Magazine from a restaurant he ate at which served it, and the restaurant obliged. It tasted very good, but the one you demonstrated sounds even better. I am surprised that you didn't have this recipe yourself already. Hey, Tammy, Cal & Marie from the Southern Country Living channel mentioned that you were in their neck.of the woods recently, I think to attend a festival, and you gave one.of their relatives a free cookbook that you compiled and that your mother was a professonal baker, something I didn't know before Your gesture was a very nice one and one that was appreciated by them since they drew attention to it. I envy them for getting such a treasure!

My much loved DIL has diverticulitis and cannot eat nuts. She loves pecan pie so I make Oatmeal Pie (no nuts, no coconut) and she gets to enjoy a very close-to-pecan pie experience. Hmmm. Maybe next pie I will add 1/4 c. Chocolate chips.

Centerville I believe is what your thinking of by Fredericksburg Texas. Center Texas is maybe about 30-45 minutes from Louisiana. I grew up in Hemphill which is about 30 minutes South of Center. I may be off on the exact times, because I have not lived in the area for over 35 years, but I visit several times a year.
I don't think we're talking about the same place. Fredericksburg Tx, and Kirrville,Tx are located north west of San Antonio,TX. Not close to Louisiana at all.

I read that the original oatmeal pie came about during the Great Depression. A shortage of pecans ( pecan trees not bearing) caused the women to substitute a cheaper ingredient to make the pie. I have a bunch of Southern Living recipe books, I wish that I could find a copy of that one.
I don't really like oatmeal but I do like oatmeal cookies so I think I'll try this. As usual when I'm trying a new recipe I'm already thinking of ways to improve it before I even start. I'll let you know how it turns out. btw, I think if your pie had completely there would not have been that liquid at the bottom
We used to have this pie twice a month and my mom would use leftover oatmeal from breakfast we used stone ground. I miss that pie we had it this way to thank you and god bless !
I just made it and it is so delicious! It is like a cross between a coconut pie and a pecan pie. I made a mistake though. On the recipe page, I didn’t notice that the eggs were listed way above the rest of the ingredients. So I missed out on the eggs, but it turned out really well anyhow. I used Marie Callender frozen piecrust for convenience because hers are pretty flaky. This is a good easy pie and I would make it again. Easy peasy! 😊

I had to substitute for the milk I didn’t have but used yogurt. And the Karo I used pure Maple syrup instead and nixed the maple flavor as that was built in but wish me luck it’s in the oven now so I should know in about an hour. Thanks again!

You can mix together sugar and flour before you put in mixing bowl. It's faster.

If you toast the oatmeal gently it will give them a nutty flavor for the pie.
