My 980 was delivered Friday and brisket was my first cook on it. Came out great this grill holds temps very well I have worries going to sleep with it running
I am new to this style of grilling, but I already have a brisket, and I plan to give this a try in the next week or so. I appreciate how you covered all the essentials, while still keeping the video relatively short. I'll definitely hang on to this and watch it again before I set out. On another note, it is a widespread misconception that the humidity has to be at or very near 100% in order for rain to fall. This is not at all true. I'll definitely be checking out your Channel.

They said that you need to keep the unit 12 FEET from any wall or ceiling per the manual. Does anyone know more about this??? I originally called them about being able to remove the legs and place into an outdoor kitchen. I was told doing so voids the warranty. With the Traeger on sale now at Costco you can according to the salesman and one it has a cool warming drawer. Btw- I also learned that you can crank it up to 700 degrees F. Here I thought I found exactly what I was looking for. Now because of the distance from any structure I need to keep thinking about the best balanced choice.

Sooo I have a few questions on this bad boy. How is the charcoal consumption on shorter cooks. I’m really looking at replacing my gas grill and dedicated smoker with either this or possibly one of the new pit boss units. Since I’ll be replacing the gas grill as well I think I’m really leaning towards this. Fuel usage is what’s kind of hindering me from the pellet grill and that I do a lot of steak, burgers, dogs n sausage, along with chicken thighs n breasts. I do cook for groups as well.
Thanks for Watching! Charcoal consumption is dependent on length of cook, temp cooking at, outside temp, if your looking to compare a gas grill, it’s not on and off. The cool down time to completely snuff out the charcoal can take up to 2 hours
That smoke ring is insane!!! Looks great, Tom! I picked up my Char-Griller Gravity 980 from Lowe’s last night and I’ll be doing the initial burn-in and first cook later this week. Thinking I’ll break it in with a brisket cook for the long holiday weekend. Quick question…Have you noticed any areas on your grill that have developed any rust? I have a covered patio, but we had a light drizzle last night with some wind. The grill got wet and today I found a few spots along the edges of the underside of the shelf and back of the hopper lid where a little rust already started to form. Any suggestions on how to treat that? I bought the official grill cover and will be keeping it covered when not in use going forward. Thanks!

Hey Tom, great video! I noticed you had what appears to be aluminum foil under the grates. Is it resting on something or is that a liner that bought? And have you noticed any negative effects on grill performance or smoke flavor?
Thanks for watching Rhickie! The aluminum foil is over the heat diffuser to make clean up easier! I cover it and then open the slots so smoke and heat flows through
Hey Tom I really appreciate all your videos on the 980 and I ended up picking one up. My question is are you getting a different actual temp than the temp shown on the readout? I’m been trying to figure out what’s going on🤦🏽♂️
Fantastic brisket! What was your final verdict of this method of doing the very high temperature at the end compared to other briskets you've done? Seems like the bark was fantastic and it had less time to braise
Looks great Tom. I have the Masterbuilt 1050 and had to weld 3mm stainless steel in the hopper to strengthen it. How good is the char grill Gravity hopper ?
Hey Tom, after this first run of a brisket on the 980, would you still use the same pre-wrap cooking temp of 200 next time or do you think you’d bump it up to 225 degrees and reduce the pre-wrap cook time to 4 hours or so? Thanks!
Thanks for Watching Ralph! I have not! I will tell you that I haven’t put any splits in the ash bucket, I think those that have the issue had splits in the ash bucket that started on fire and burned the flap. I only put wood chunks in with the charcoal

Question for you bud. How accurate is your PID vs a grate probe? My grill is roughly 100 degrees off from my Thermworks Smoke. I've tried a few different probes, as well as another temperature unit and they all read the same at 100 degrees off from the PID. The sad thing is that it is 100 degrees off and then over time creeps up to within 15 degrees which makes a smoke absolutely dreadful. Great grill but to me, I have to send that back.
Wow 100 degrees! I don’t have that,,, I’d take it back too if it was 100 degrees off. What I’ve noticed on mine is at low and slow 200-255 that it off about 10 -15 degrees lower than set which for me is ok. It’s low and slow. Once I get closer to 300 and up it evens out to about plus or minus 5-10 degrees. Did you contact customer service? Thanks for Watching!

I'm assuming that they dropped it off of the truck in a horrendous manner and that damaged it somehow. It's great smoker and even with that massive variation, I've made some killer Q and steaks, but I need a more reliable grill...lol. Thanks for your input and I'm glad it's just me.
I get about 35 to 40. I just have to learn the curve off this thing. It's ok by me. Kinda makes you low and slow and then do the bump up. My beef ribs turned out outstanding according to the guests. I thought i could improve. Had a big ol water pan in there. They were tender as all get out.
407 BBQ is in Argyle Texas. It’s up north of Fort Worth and it is delicious bbq. Some of the best in the area here

Thanks for watching! Yes mine seems to read about 20 degrees higher than actual at lower temps. Above 300 it evens out to about 5-10 degrees

$45 for a brisket flat at Sams?! My Sams has whole prime brisket for $45. For some reason the prime whole brisket is way cheaper than the flats.
