Appreciate you watching Brian! I find that I usually get the color I want at around the 2 he mark at 275 and about two hours wrapped gets me the pull back and tenderness I like. It varies sometimes but not much. 👍🏾💯

I watched so many videos comparing the Master Built gravity fed and the Chargriller 980. Yours was one of the deciding videos that helped me purchase my Chargriller 980 yesterday. I wanted and had my mind dead set on the Master Built, but I have learned to listen more to others and it worked! I was SO impressed with the Chargriller 980 and the ease of use and how FAST this thing fires up. Got late but I threw a couple of steaks on there and they turned out perfect. I'm trying to convince the wife to sign off on this cooker since I recently got the Char Griller XD offset....y'all pray for me!! Ribs look fantastic Sir. By the way, I got an email from Char Griller "introducing" me to the Gravity 980 that answered some FAQ and they featured your pork steaks first cook video----very cool!
I like the way you cook! Butter is always better! People who want to avoid butter...? There's a McDonald's down the road! Never seen ribs done this way. Looks like a great way to do them! I'll definitely be giving this a try, but I'm gonna add some cayenne to the wrap mixture.
I pulled the trigger and bought the 980 today! A buddy and I are going to assemble it in a few days, looking forward to my first smoke. Keep up the great content.

My 980 came in, its assembled, seasoned and ready to go! Doing this tomorrow. Experimenting with my sauces. 1 rack as Thai Basil Beef Habanero, 1 mild SBR for the wife, 2 extra spicy Memphis style.

Looked great. Used to be 225 all the time, but lately been finding 275 has been giving me better results. My favorite style is the Memphis dry rub where I wait until the rub sets and then use a mop sauce ever 45 mins until done. Then finish with more rub. Just love the bark that develops from the oils in the mops sauce.
Just got this smoker built and burnt in this week. My first smoke is going to be a couple pork butts this weekend, so excited! Been using a camp chef pellet smoker for the last couple years and love it but wanted more cook space. Definitely gonna try this recipe next time though!

I like to add my wood in the chute layering it in between charcoal and maybe one or two chunks max in the ash pan to the left side. This is my go to method for baby backs as well. After having a pellet smoker that I returned I got one of these and finally have the smoker flavor I was missing with the pellet smoker. Even with smoke tubes the pellet grill never matched this for flavor.
Picture Perfect Ribs, I just ordered my 980 from Lowes..... I did a couple racks Sunday.. "Weber Kettle" Cherry Smoke, Harry Soo's Slap Your Daddy rub, Spritz with 50/50 ACV and apple juice, when I wrapped them I went with a cherry preserve I had on hand. No glaze after that, Just let them rest, wrapped for 45min. Came out great... I noticed you didn't use a binder. Is that standard, Or do you use binders from time to time... If so what do you prefer? ` Nice job,

It may be worth a shot to look at it again on the 980 but I’m okay with taking a few mins for it to get going. Thanks for your support!

Thanks for watching Christopher! Much more smoke flavor. I’ve cooked on a few pellet smokers and the natural wood chunk burning gives a much better flavor. I used to run a stick burner offset and it’s not the same as that. But it’s a lot better and much more pronounced than the pellet.
@@OGBamBam-06 the 980 should give you some good smoke flavor. I layer my chunks in the hopper and alternate with the charcoal. If I want to go extra heavy, I put some in the ash pan too. I keep a good variety around the house. Cherry, Apple, Hickory, Pecan and my favorite is Post Oak. It really depends on how heavy you go with it but I’ve gotten some great flavor off this and my Masterbuilt 560 when it comes to smoke. Good smoke rings too.

I’m going to take it off the next time I sear to see if I get better results. I’ll come back to this comment and let you know.

Jeff, I do my ribs basically the same way except I go 2 1/2 hours initially, then leave them wrapped for 1.5 hours, otherwise they seem to get overdone on me, do you think it’s necessary to go the full two hours wrapped? Thanks for the video.

Now I do check it at about an hour and see how they’re doing but I left that out in edit and consistently I’ve been getting those type of results with the 2 hour run. But I do keep an eye out. Especially if I have a wrap that has a lot of liquid in it, be it a sauce and extra butter. But I agree with you on the fact that I can’t stand a fall off the bone rib. If I wanted to go that route I’d just make pulled pork from a shoulder. 😂 Thanks for your support!
I would never buy a Char- Griller because of the grates !! Why do people do something really, really good then drop the ball in the end ? IMO the best gravity fed charcoal smoker for offer now is the Masterbuilt 800 !!!!!! If you can find one ;seem to be out of stock ?
