Well here’s the real secret ingredients that theaters use:
- Refined coconut oil that has been dyed yellow with beta carotene. This makes the popcorn look buttery.
- Flavacol popcorn seasoning. It is mostly super fine salt like you made, but also has some extra seasoning to give the popcorn a super buttery flavor.
I make it at home and it tastes identical. The only difference is that it isn’t a yellow because I don’t use coconut oil that has been colored. Just melt the coconut oil and add the kernels + Flavacol at the same time. You want to make sure that you stir it immediately to get the Flavacol evenly mixed into the oil. As it pops, it gets seasoned. You just need to keep it moving as it pops. Turns out great!

Fun fact from a theater employee: The reason the popcorn at the theater is that orange-yellow is because of a dye added to the salt NOT because it’s butter or cheddar flavored.

I've been saying the same thing for decades. McDonald's salt packets used to be super fine salt granules. I would stash them away and only use them for fresh hot popcorn. Now, I smash kosher salt in a mortar and pestle to get a powdery consistency. Best popcorn is seasoned this way. ❤☝️

The actual secret ingredient is Flavacol and coconut oil. Melt 2 tbps of coconut oil under medium-high heat and add 1/2 cup of popcorn. Add 1/2 tsp of Flavacol and "shake" the pan until all kernels are evenly coated in oil and Flavacol. Cover and wait until all the kernels have popped and you will have actual movie theater popcorn and your kitchen will smell like the lobby of an AMC.

Here in Australia, one of the cinema chains uses a very processed salt called 'butter salt' and it's super fine like this example. They also use a very yellow palm oil (no idea if it's ethically sourced, probs not 🙃) that is the main factor in the colour and flavour of the popcorn (an ex-cinema worker).
I always wondered how every popcorn is salted perfectly, everytime I would salt my popcorn it never stuck to the popcorn and either stuck to the pan at the bottom or made its way to the bottom of the bowl. Now I know the secret
imo the best result for homemade movie theatre popcorn was coconut oil to pop the kernels, powdered salt, and ghee instead of butter. tastes amazing

I toss my homemade popcorn in some salt, sugar, a tiny bit of red chilli powder and melted clarified butter (ghee) - I think homemade popcorn is better than movie theatre popcorn as it stays crispy and fluffy for a longer time.

Cooks nicely without smoking, too. You can see in this video her butter burned just from bringing it up to temperature to cook the popcorn.

@@morgan3918 depends on the theatre. I worked at a chain that used real butter, but most places will just use butter-flavored oil blends. The chain I worked for went bankrupt and closed all their locations last year, so maybe the high end concessions weren't worth it 😂

I work at a movie theatre and we make the popcorn with this weird bright orange oil and what’s basically yellow edible road salt. The free topping isn’t butter, it’s canola oil, and the real butter we offer gets sold until it is completely used up. We have this disgusting container of who knows how old butter that we constantly refrigerate and microwave over and over again. When the theatre closes we just dump the leftover melted butter back in the fridge and use it the next day.
Thanks for being honest. I never trusted movie theater popcorn, doesn't matter how good it tasted. It just seemed gross to me 🤢😂

It's called Flavacol. There is another trick too, they get high quality corn kernels. Buy locally sourced, the difference is huge.

@@thomasbh5223 They do. First, the type of popcorn they use is different from most mass distribution corns (Medium butterfly, not large--medium is more expensive, but its 'fluffier'). Second, because they get it from wholesale distributors, its typically far fresher than the shit you can buy in a grocery store.
Buying fresh corn kernels that haven't sat in a distribution chain for 6 months makes a massive difference (Also buying medium winged popcorn, and not large)

for any of the specific few people this applies to, you dont need a blender just to get the popcorn salt that fine. if you happen to have a mortar and pestle youll be able to grind it down to super fine granularity pretty fast

I used to work at a movie theater, we got free popcorn and now I'm tired of it.
Same. After snacking on them so many times you start to realize they don't really fill you up or give you energy. After a while they start to taste like nothing. Best not to eat them so often. Same goes for french fries.

I use half Whirl butter flavored oil and Tastee Pop oil (refined coconut oil, canola oil, beta carotine, natural and artificial butter flavor). I have a stirring popper that spins too slow to put the Flavacol in with it, so I put it on after. Pour a single layer of popped kernels, sprinkle on Flavacol, then more popcorn, then Flavacol. Toss it for about 20 seconds to mix thoroughly, and it is delicious!
Bonus hint: Whirl is good for use when baking to "grease" the pans, and on fresh baked biscuits (grease the pan with it, and brush it on right after the biscuits come out.)
Super tip if you anyone wants that yellow color to your popcorn like the theatre one. The natural option which is harmless is adding a bit of turmeric to the pan.

My mom uses a stir crazy with coconut oil. Once she's popped it, she puts Orville popcorn oil on the top and Sam's club brand popcorn salt (Flavacol also works) on top of the oil to get it to stick. It is super delicious!
Back in the day (70's, 80's, early 90's) most theaters, except AMC, depended on a concession supplier to deliver their pre-popped popcorn. The theater would warm the popcorn in glass fronted popcorn warmers. They would ask if you would like "butter." But what they drizzled on the popcorn was not butter. It was a food industry basting dressing that had an intense butter flavor.
Just buy Flavacol from Amazon or wherever. It's literally what the theatres use, it will get you the exact taste you're looking for. Fine salt is not all there is to it.

at the cinema i work at, we use seasoning salt that we put in WHILE the popcorn is cooking. it’s also always hot, because of the warmer in the machine. we use a shit ton of oil. and the popcorn is always moving as well, to keep it from burning.
I get flavacol at my local food service store and it makes perfect movie theater popcorn
There are also butter flavored oil you can get that is like the butter oil they use at the theaters. There's also a butter/salt granules you can get instead of just grinding up your own salt. This stuff can be used to pop the popcorn and then sprinkled on after cooking.

I agree with the other comments. Flavrcol powder is quite cheap and it's what we used with the liquid popcorn oil like reddenbaker type in the store people loved it at the bar I worked in.

We popped a fresh batch for her and the rest of the bar chewed the fresh hot popcorn. They had the big machine too
I've worked at two movie theaters and if you want real movie theater popcorn go to amazon and buy the carton of "flavacol" its the popcorn season and its $7. while you're on amazon buy coconut oil thats flavored butter, because the "butter" at movie theaters is really just coconut oil. so when you cook it on your stove put the oil (be generous cause theaters use a lot of oil) and maybe a tablespoon or two of the popcorn salt and let it cook in the oil and salt. you're welcome :)

Nothing beats homemade popcorn on the stove. I like the old fashioned way, not to say microwave popcorn is bad. But homemade you can control how much salt and butter you want and it makes me feel proud to do things the old way.

I use ramen sauce packets to season my popcorn sometimes cause lots have tiny bits of powdery salt in there and it gives a nice flavour depending on which you choose!

I work at a movie theater and we are constantly asked about this. What we you is "flavacol" which is a flavoring used to 'season' the popcorn without a ton of butter or salt. And you really don't need much to make it taste amazing
they use fine butter salt and fine salt. u put vegetable oil on a pan and mix the salt in there, when its heated up u put in popcorn and wait for it to pop, make sure u dont burn it or over do it. my dad works in the fast food industry, and he makes this at home, its just like theather popcorn.

@@Mark-ww1vf I’m in the U.S. and here it’s traditionally served savory with salt and butter (or butter flavored oil actually). We do have sweet popcorn like caramel corn or kettle corn but I’ve personally never seen them available in a movie theater.

Oh man, I just got into making popcorn on the stove lately. Flavacol works well. Orville redenbacher also sells popcorn oil that works well. On top of that there's like a bajillion varieties of popcorn, found some cool purple hulled popcorn that tastes really good.

Canola Oil + Super Fine Salt + Pan + Corn Kernels = yes
Make super fine salt, mix with butter extract and a bit of monosodium glutamate for intense flavor. Bake it low and slow to get it extra dry.
Cook your popcorn in coconut oil, and salt in a large metal bowl while still steaming, then toss.
If you want cheesy popcorn, toss in a pouch from a box of kraft Mac n Cheese.

I worked at a theatre for a while, when making the popcorn you would heat the kettle and then add the oil(soy bean) but some use coconut, then you would scoop the popcorn and pour in the tiny scoop of the extra fine salt into the kernels, then you would dump the combined kernel/salt mix into the popper kettle and MAGIC!
The butter that is put in the popcorn, also a soybean oil.
If you added the oil first, you got lucky. It pops and can cause serious harm

Gotta thank your good old friend Flavorcol and superfine salt as most people in the comments will tell you. However the mechanism in those big, industrial popcorn machines make a difference too. It gently stirs the kernels around and distributes the heat evenly so almost no popcorn bit is burnt. It also pops more kernels leaving less old maids, and unpopped ones left on the bottom. If your theater of choice had real butter to put on top that's even better, and always ask them to butter it both in the middle and the top for proper butter displacement.
@@fischerrosen Well yeah that does kinda suck. That's why I prefer the 2 layer method. It's the sweet spot.
Place the lid at a slant on the pot so that steam can escape and keep the popcorn crunchy! Also I've find that using flavacol salt is the best.
I found that butter tends to make the popcorn pop in a funny way... It's usually not as fluffy as it should be. I also grind my salt & it definitely makes a difference, but most of the time I just pop using canola or sunflower oil, then add one of the popcorn seasonings from the spice shop. Obviously not as great as the one at the cinema, but definitely better than using real butter!

Fine salt definitely unlocks more flavor than I expected but there are some very distinctive flavors I've yet to figure out. Has something to do with the oil, butter and that orange/yellow salt they use.
At my theatre (work) we use some yellow salt stuff, I think it’s butter flavoured salt, and we cook it in oil, then if u pay extra we put melted butter on top. It’s a chain throughout Canada called cineplex idk if it’s in other countries
