YESSS the Costco poppy seed muffins were my favorite as a kid!!! I wanted to use this recipe to try to recreate them and it worked PERFECTLY! I did change the recipe a tiny bit, I omitted the lemon zest and lemon juice, doubled the vanilla, and added an additional 1/4 cup sweetener, baked for 28 min. It made 6 extra large muffins and they tasted and looked *literally identical* to the Costco ones!! THANK YOU for this recipe!!!! Also, it's awesome that this contains no stabilizers like xanthan gum or psyllium husk!
If you don't like the heaviness of almond flour, try these. I have baked dozens of recipes from across the net and in low carb cookbooks and this is the lightest I have tried yet. I have used this base recipe for all kinds of flavors and it works everytime. Makes a great texture and taste. Even if you don't have sour cream you can use keto yogurt and it works as well. Thank you for this recipe! I eat them almost everyday for a snack at work.

I just made them and I literally can't tell the difference between this and "normal" muffins. The texture is shockingly good for a keto baked good and just straight good period! I would definitely give these a try if you haven't already!
Hi, this looks great, and the narrative is simply the best. I have a n iquiry if its possible, is it possible to use jicama as substitute for almond flour in making this muffin? My place is flooding with cheap jicama currently. This global warming is promoting the thriving of jicama recently, is it possible to make this into muffins?
Speaking of drink mix, for cookies and cakey things like this I use sugar-free drink mix, which has a lot of tart fruit flavor, much more flavor than using extracts and the tiny bit of fruit juice you're allowed on keto.
Just come for the delightful snarky humor if lectins are bothersome/but note how many recipes have coconut added. A state of ketosis is so advantageous, also for us serious celiacs, it’s a life changer. Elizabeth
Oxalates are no joke! I can't do almond flour either. Given how many people have nut allergies, I'm surprised that people are using it so much in keto recipes! Try replacing the almond flour with bamboo fiber cut with psyllium husk or oat fiber (both low oxalate options).
I am giving up on using Almond flour in large amounts. Makes things too heavy. Yesterday make chocolate chip muffins from another channel. #1, not very sweet, heavy and still stuck to the suggested parchment paper liners! Total fail except for the chocolate chips. Your batter didn't seem so heavy.
I don’t think she’s eating the entire batch in one sitting 😂 plus not everyone has issues with lectins not everyone has the same issues across the board Not to mention when you divide the almond flour up in recipes it’s not as much as you’re seeing in the entire batch

That LOOKS AMAZING! How's the "mouth feel"? Using nut flours usually make them too dense/dry.
