Thanks for the recipe. Do you think it would work without adding the 1 cup of almond flour (to lower the carb count)?
For 24 squares it works out to be 4.3 net carb per serving. The almond meal helps with the consistency!

If I substitute coconut flour for the almond flour, would I need to use less since coconut flour thickens more? Also, hoping "unsweetened" baker's chocolate is ok to use, assuming more sweetener would be needed.
I made my first batch with coconut flour and using a 1/2 cup meant adding more butter and sweetener to get the right flavor and texture. Same thing with the unsweetened baker's chocolate which needed more butter and sweetener, but these tweaks didn't add more carbs. It turned out much less sweet than a typical chocolate-peanut butter candy bar, but that was actually better. My only concern is that when I tried to cut the squares, cold meant too hard to cut nice, straight lines. And upon serving, the layer of hardened chocolate separated almost cleanly from the layer of peanut butter. To fix these form issues, next time I will wait just until the peanut butter mixture is set, but not hard, to top with the chocolate in hopes of the two layers really connecting. After refrigerating, I will allow it to sit at room temperature for an hour or so before attempting to cut the squares.
1 Cup Almond flour=1/3 Cup coconut flour

Gayle McLeod if you want to use coconut flour instead of the almond meal, what would the measurement be? I'd like to make this for Thanksgiving and make it an option for a friend who has a nut sensitivity, but not to peanuts, since that's a legume. Thank you!

The carb count will be higher due to the fact you are using tapioca flour with coconut flour . I'm hoping the butter is enough liquid. Good luck and Happy Thanksgiving:)

All your recipes look so good but the problem I am having is locating this Erythritol. I know it can be ordered online but I live in a Major US city......for the life of me I can't seem to find it in any store. It's gonna really irritate me if I have to order a sugar substitute online when I live in the 6th largest city in the US 😡. Am I just not going to the secret sugar alcohol dealer......do I have to order this magical sweetener online? Thank you for you videos!

You are correct Erythritol is expensive!
Not a big fan of stevia but more n my budget & a tiny bit goes a long way. Have you tried stevia?
I haven't found it either in the regular store or the health food stores. I've seen Xylitol, but would rather not use that.

Hi FitAnge, yes, use all natural unsweetened peanut butter. Now it is the almond flour that helps to thicken the peanut butter so I would think the almond butter would work if it has the same consistency as the peanut butter. If you try it let me know flavor and if you like. Take Care!

im going to substitute coconut sugar in place of any sugar alcohols. mych better for my digestive system. I don't have almond on hand but i have pecan meal.

I usually use salt free butter, if the peanut butter has salt in it. I find peanut butter so salty. I like the taste of butter in my sweets, I use the Organics cultured unsalted, its kinda pricey, but has a real buttery taste, plus being cultured makes it tastier, and I think it might have some probiotic's in it, it also come in salted too. I sometimes use half butter, half coconut oil, it give a nice flavor, if you like coconut flavor, you still taste the butter though.

Am I the only one that experiencing that unpleasant cooling effect with Erythritol? No one mentions it and I see all these recipes that use a lot of Erythritol. Thank you for the video though. I just know I can't make desserts.
Hi Species, You are correct Erythritol does have a cooling sensation but personally I do not find it unpleasant. Actually I don't think I notice it in this recipe. You Take Care!
Species710 If you use a blend of sweeteners, it'll cut down on the effect. Lots of people use a blend of erythritol and Stevia, even a bit of sucralose. Truvia, the pure stuff, rather than the baking blend that has sugar in it, would perhaps be better for you. 😊

The peanut mixture is quite runny so if you put in fridge to harden then take out and roll individuals, put back into fridge to harden. The chocolate is very runny so if you are good you could dip and place back in fridge. Good Luck, Love hearing from you:)

They look good, but do they come with a angioplasty. That is a lot of butter,lol
lar4305 Butter does not clog your arteries. The idea of low carb does not mean low fat. Carbs raise your insulin. Too much insulin is what eventually causes heart disease. Fat (butter) does not raise insulin at all, so does not contribute to heart disease when part of a low carb way of eating.
