    Just a hint-if you put the cocoa powder through a sifter it is much easier to get it to incorporate into the milk.

    My husband recently ran across y'alls videos. He has been low carb for a while but we recently ran across dr. Bernstein's book for diabetics. My daughter was diagnosed at 7 years old with the autoimmune form of diabetes, (that's her in my "profile" pic) type 1 diabetes, she is now 11. Any way, it's a difficult disease to control if you follow the ADA's guidelines of death. She has been following the low carb plan and yall's recipes have been a life saver, literally! We are in love with this ice cream recipe. Her numbers were a roller coaster before starting, an A1C of 8.9 (basically the accumulation of blood sugars over 3 months). Which put her average blood sugar readings at about 200 and above. Normal fasting is 80-110. She's also going through puberty so they told us to expect bad numbers. Following the rule of small numbers, low carbs, less insulin needs causing less variables, she's been 106 and below all day and the last few days, we started on Saturday. Her average would be about 100 now. I'm amazed! Great work y'all! ❤️❤️❤️

      Rebecca Calvo hi i also have diabetes mellitus type 1 and just started doing keto diet but i dont know what to do with my insulin (long and short acting) ...does your daughter still use insulin or did you change the pattern of injection or the dosage i would be really greatful .... and i looked up the doctor book you talked a bout should i read it ?

      My son was dx with type 1 before his 5th birthday. I've found low car much easier on his number. Been almost 1 week on KETO- having to deal with full and healthy fats, no sugar, and no/low carbs keeps his blood sugars in a much more stable range. He is 13 now and growing like a WEED so we are still making adjustments to his 'serving size' but so happy for now!

      @@nanochan1168 Yes please read the book and look him up on UA-cam. I also have type 1. When I went low carb I had to drastically reduce my insulin amount but because my body doesn't produce any insulin (as all type 1s) I will always be on insulin.

    This stuff is amazing!! Tried it tonight and my husband, who hates anything sugar free loved it! Will be making it again tomorrow. For everyone complaining about the "raw" eggs, I guess you never eat mayonnaise!

    UPDATE: I've since made keto ice cream 4 times using your ice cream base minus cocoa powder. I've made peanut butter ice cream with chopped unsweetened baking chocolate, mint chocolate chip and orange creamsicle. This recipe is a winner!

    Let me just say that I’ve tried other keto ice creams and they all taste like frozen mousse. This tasted like REAL ICE CREAM!!! no kidding you guys. The taste and texture is ON POINT.     so my hubby loved this right out of the freezer. it was almost too creamy for my taste, so I took a serving, added a few cubes of ice and a splash of water, then blended it in my NutriBullet and omg...MILKSHAKE! A delicious MILKSHAKE that is so chocolately and delicious. thanks for the recipe y'all!

    I make ice cream with similar ingredients - just blend it all together in my vitamix and then the icecream maker - no fuss. I use about 2 c. organic heavy whipping cream, 3-4 egg yolks, lots of vanilla and erythritol and stevia. To that I add ingredients like strawberries, or cacao, sometimes crushed pecans, dark chocolate pieces, etc.

    This was so delicious. I omitted cocoa powder since I have never had success with any keto recipes with chocolate. I find them too bitter without real sugar. Instead I added cardamom, rose essence and vanilla. It was like ice cream kulfi at Indian restaurants. Yum Yum

      Appreciate Video! Apologies for chiming in, I am interested in your thoughts. Have you researched - Dinanlinson Elegant Figure Approach (Have a quick look on google cant remember the place now)? It is a smashing one off product for uncovering the secrets behind a highly effective low carb diet minus the headache. Ive heard some incredible things about it and my GF got cool results with it.

    After mixing the egg yolks and the chocolate and cream, you need to heat the egg mixture to 165°F to get rid of any chance of salmonella. Also sieve the heated mixture before freezing. It makes the ice cream creamier and gets rid of any of the cocoa powder lumps and scrambled egg lumps (if you added the hot cream to the eggs too quickly)

    You should try putting the unfrozen mixture in a ziploc bag and putting that in a bigger ziploc bag/jar filled with ice cubes and a few tablespoons of salt. Go wild and shake that up for 5 minutes or until the ice cream is formed. (Use gloves or take turns! It can get really cold)

      Fun fact: Dry ice doesn't evaporate. It is transforming from solid straight to gas through a process called sublimation.

    This was so creamy and amazing! The second time I made strawberry by blending about 3 strawberries with cream cheese and adding that to the yolks. It tasted like Haagen Dazs strawberry ice cream! I couldn’t believe it. Thank you guys for all the great videos! ❤️

    You don't have to wait for the base to cool. You can slowly temper the eggs by adding a small amount of the base while whisking to bring the temperature of the eggs up without "scrambling" them. Then you can add them to the hit base. Which will give your eggs a more custard like consistency and also pasturize the eggs. Aka no salmonella.

    FYI, if using erythritol sugar, I grind it in a smoother maker, or mixer for just 20 seconds - then it's powdered and blends beautifully :) I do this for almost every recipe using erythritol

    Thanks for the recipe guys! I scalded the cream with 1/4 C crushed coffee beans and steeped for about 20 minutes before straining and bringing back up to a boil. Omitted the cocoa. It was the best coffee ice cream I’ve ever had!

    I did this recipe but swapped the cocoa powder with 1/2 tablespoon of matcha powder to create a really rich, delicious green tea ice cream. I also added half a teaspoon of pure vodka to keep it scoopable in the freezer.

    This came out so delicious! It also inspired me to make hot cocoa since I was too impatient to wait for this to freeze... 1 cup unsweetened almond milk, 3 Tbl heavy whipping cream, 2 tsp cacao powder, about 1.5 Tbl erithrotol, and a dash of sea salt.. Heat up in a saucepan and enjoy! I love your channel!

    look awesome, one thing I would suggest is you can add a tiny bit of vodka or vegetable glycerin to make the consistency super soft . I've seen tons of low carb recipes for ice cream that use that . thanks for the recipe, definitely will give this a go 😁

      This is the first time i've ever heared of using vegetable glycerin! How much would you recommend using for a recipe like this? I don't drink so i don't like the idea of adding vodka to ice cream/sorbets, it wont cook out like it does when cooking food.

      I make a quart and a half of keto ice cream at a time, usually with stevia. I add a full tablespoon of vegetable glycerin and that keeps it soft even when frozen. Never have to wait to scoop some out. Its great.

    You could grind erythritol in a coffee grinder before adding it.That should give it a powdery consistency.

      I don't have a coffee grinder so I just used my blender on high for about 1 minute to create a powdery Stevia Baking Blend. It worked well.

    I did this recipe today with my mom. We couldn't believe it. I freaking loved it!!! Ice cream has always been my favorite desert, and now I don't have to pretend that It doesn't exists.

    I made this recipe yesterday and it finally firmed up. But I tasted it last night while still soft and it was delicious!! It's better than Hilltop ice cream. I added some peanut butter and homemade chocolate chips and that satisfied my sweet tooth. I'll never buy expensive low carb ice cream again!

      @@fatimaabdelaziz6344 Cocoa powder, melted coconut oil and erythritol. (sorry I didn't do exact measurements) I stirred all those ingredients together. And then I spread this mixture onto parchment paper and placed it into the freezer until firm. Once firm, I cut it up into small pieces.

    Gelato just means ice cream in Italian. it has higher sugar than regular ice cream but is lower in fat , it has less air so less mixing which makes it more denser and rich than regular ice cream.

    Your ice cream is a game changer! I used my blender to create powdered erythyritol since i don't have Swerve. OMFG! I doubled the recipe and added 70 grams (1/2 cup) of frozen cherries. (I know. NOT a keto food!) Chocolate covered cherry ice cream was born!

    Multiply all her ingredients' amounts by 1.5, add 1/4 cup coffee and 2 tbsp coconut butter to the cream as it enters heat, add 1/2 tsp cinnamon along with cocoa powder, and you have yourself exactly enough to fill an empty pint ice cream container with the most delicious thing you'll ever have. Also if you time it right you can end up with little chocolate chunks mixed into the ice cream. I've been making this stuff every couple days now. Love it.

    If you save about 1 Tbl of the cream out and mix it with the cocoa powder before adding to the heated mixture you will avoid clumps. This also works in a countertop icecream maker!

    Gelato is a mixture of milk and sugar. There are no eggs in gelato or heavy cream. What you made is frozen custard, you should cook ur eggs a bit so they thicken your mixture and are safer to eat. Other than that I love your ideas and Keto recipes. I have watched more than 6 already. I commented on this particular recipe because I’m an ice cream fanatic too.

    I made butter almond with this recipe. I tweaked it by reducing swerve to a 1/4 cup. And 1/2 cup chopped almonds in 1 tsp 1/2 butter toasted. I melted 2 tbsp butter and 1 cup cream with 1/4 cup swerve added two yolks , Torani vanilla syrup 1 1/2 tsp and 1/2 tsp vanilla.. It was so good

    Hey kiddo, the Swerve doesn't "melt" into the cream, but rather it dissolves. The main sweet component of Swerve is erythritol, and it is highly soluble in water-based foods.
    BTW, good video. You are really concise and your diction makes it very easy to follow.

    I just made this and it tastes amazing! I did not use the eggs, but substitued them with Half and Half, with a pinch of Vanilla Extract. I calculated the entire bowl to be around 400 calories (not bad.) The bowl is equivalent to a half gallon, maybe a bit less. I eat a quarter of that bowl and don't feel guilty, with all the sugar of other ice creams.

    I tripled the recipe bc there are three people in my house on keto and I wasn't sure about serving sizes. These are the macros I got and serving size.
    SERV SIZE 40 ML/40 G OR approximately 3 TBSP
    MACROS: Calories 177 Carbs 10 Fat 18 Protein 1

      @@Tiwi0220 that is what I wanted to warn people about...serving size! due to carb count, BUT well worth it!! Especially if you are craving real yummy chocolate ice cream...not gonna lie about that. The carbs come from the sweetner and cocoa powder, if memory serves me. Again, I tripled the recipe, so I had to divide the carbs up to 10 carbs or less to get the serving size that would be acceptable in my household. On ice cream day, we stave off the carbs all day for our special treat. I serve it with some berries (raspberries, blackberries, or strawberries, whatever I have on hand). I know it doesn't sound like a lot, but it works for us, and it is DIVINE!! :)

      I have no carbs in my sweetener as I would use erythritol. Also the cocoa has 1 carb per serving if you are doing net carbs. Was this taken into account. I appreciate you breaking it down. I am just really trying to figure out how exactly this would work for me @Stephanie Rodriguez

      @@Tiwi0220 now you made me go look at my ingredients again...lol... I did not use cocoa powder, I used Hershey's 100% unsweetened cacao powder, which has 1 g net carb per TBSP (this might be where I messed up, because I think I used the full 3 g carb per TBSP), so that is cool if I did and you are correct! LOL The total carb then for just the cacao powder in my recipe is then 4.5 carbs. Also, my heavy whipping cream has 1 g carb per TBSP, and I used 3 cups, so that comes out to 48 g carb (16 TBSP per 1 cup, and I used 3 cups) and then lastly is the Swerve Confectioner Sugar, which has 3 g carb per teaspoon, (48 tsp in a cup) so that comes to a total of 144 g carb (because no fiber information available on the Swerve package, I am counting the full 3 g/tsp, as Swerve Confectioner only contains erythritol and oligosaccharides (carbs aka simple sugars linked together), and natural flavors (?) So, the total carbs I counted in my tripled recipe now comes to a grand total of 196.5 g carbs for the whole tripled recipe I made. So, if I just use my 3 cups of liquid as a source, that would be 48 TBSPs, so 196.5 g total carbs divided by 48 TBSPs, would actually be higher than I reported, at 4.1 g carb/TBSP, and if we have three TBSPs that is 12.3 g carb per serving. Thank you for bringing this to my attention! I was never good with math LOL

      Ready for another doozy? My heavy whipping cream has less than 1 carb per 2 tablespoons. Ends up 1 cup is less than 8 carbs. Erythritol has 0 carbs. And if you are doing strict clean keto, then count the alcohol sugar carbs. If it the less restrictive then alcohol sugars do not count! You may be able to to have more than 3 tablespoons lol. I have done the less restrictive one for 7 months and lost 85lbs. And am always in ketosis. I do net carbs and do not count alcohol sugar carbs.

    Made this last night and toasted some pecans also to add extra crunch. Eating it now - so good! And not icy at all. The consistency is perfect. It's almost too good to be true, that an easy recipe with a few ingredients will be this awesome. Thanks for sharing the recipe, I will be using this as a base recipe for sure! :)

      Yeah a little vanilla almond extract without the Coco might actually taste better. I find Cocoa to be very bitter and it's hard to find the right sweetness when mixing cocoa and stevia

    I beat the yolks with a Tbspn of 150 proof rum and strain. It "cooks" the yolk nicely. I sweeten with monk fruit or 3:1 parts saccharine/white sugar. It's the best

      Id say she spooned it because do you have any idea how rich in flavor this dark chocolate ice cream is? after like 2 scoops I was done, no more.. I tried her recipe with just no coco powder but rather let it sit and cool in the fridge a little bit then add chocolate chips to the mixture, I liked that version better. Vanilla with just a little bit of chocolate chips. Not as rich and you don't end with 2 spoons and be "done for the day"

    I've started making myself an "Erythritol Syrup" in the microwave to use in any keto baking, ice cream or drink recipes. I just put 1/2 cup of erythytitol into a measuring cup with 1/2 cup water. Stir very well and microwave in 30-45 second increments until all Erythritol is melted. You're left with a syrup that can be easily encorporated into any/all recipes that call for your sweetener PLUS you're not left with the grainy texture that sometimes happens when using Erythritol 😉 I generally will use the syrup "to taste" when it's called for in a recipe.

    I've been trying different recipes for keto ice cream with mixed success. I mean, it's always good, but I wanted GREAT. I made this recipe and churned it in my Cuisinart ice cream maker. A couple of days ago, I baked an almond flour cookie (giant cookie) and crumbled it in while it was churning. It's incredible. The cookie needs to be kind of stale so that it doesn't dissolve into the ice cream. Perfection!

    You guys need to try this Keto ice cream called Rebel Creamery. It was originally a Kickstarter thing back around Christmas time (literally the Kickstarter funding ended on Christmas Eve), and it was supposed to be released to us Kickstarter supporters around April, but it kept getting pushed back. They finally started sending orders out to the supporters this week! Once they are done sending the orders to all the backers/supporters they will open their online store too everyone (so probably in about week). And it’s soooo good! You guys have to try it! And get the word out so they can sell Rebel Creamery in stores! It’s full fat ice cream, and it’s sweetened with Monk Fruit and Erythritol. Even my boyfriend liked it, and he usually will not touch anything that isn’t sweetened with *real* sugar.

    OMG. This ice cream is too good! Better than normal ice cream, which is not good cuz It is hard to stop eating once I start.
    Does anyone have an idea of how to prevent it from hardening completely in the freezer? MCT oil doesn't work.
    I have made the cocoa with crushed almonds and I have also made vanilla with a Tablespoon of vanilla instead of cocoa powder. So yummy! It tastes like vanilla bean. Next, I am going to make mocha ice cream with coffee extract and Lilly's chocolate chips. So excited!
    Any more flavor ideas?

      I've heard stabilizers like guar gum and xanthan gum can keep it from freezing solid, but haven't tried using them yet

    I figured out another way to make this without cooking & instead of cocoa I used PB2 choc/peanut butter it’s so delicious.
    Take out your chilled heavy cream mix in swerve then blend to fluffy add eggs & vanilla mix again. It will really fluff up super creamy & rich.

    Ok I looked through the comments and didn't see what I was thinking.
    I would say maybe you should talk to a chef before you post.
    I would describe what you made as Semifreddo first I would temper the eggs (pour a little of the cream mixture into the egg mixture ) and pour that back into the pot and return to the heat then cook to nape(coating the back of a spoon) in an 8×8 glass dish pour rhe mixer freeze for a while then using a fork scrape the mixture as you did until it is all frozen. You can do this to unused coffee for a cheap dessert.

    Wow. I just made this recipe (but put my egg yolks in the mix and back on the heat) and the texture was super creamy like gelato and the flavor was amazing. Literally cannot tell it is sugar free. I am going to try with matcha powder next for a yummy green tea Ice cream.

    Your videos made keto seem easy.. I lost 70lbs in 2019. I stopped keto when I started running in 2020 and gained 15lbs back. but 2021 I'm doing keto fueled runs and not using "carb loading" as an excuse to eat junk food. I know ketosis works well with long runs.

    Skip the sugar substitute and use just a bit of fruit, (berries.) I also like to take baker's chocolate (unsweetened) and crush it up and put it in instead of cocoa powder for a "chocolate chip" type ice cream.

    I used stevia and it dissolved. I just blitzed it together with the egg yolks in my nutribullet. Added 1 tbsp of pb and Holy Moly so good!! My kitchen is a mess but I have ice cream lol thanks ketoconnect

      Butter is made by whipping heavy cream until the fat separates from the whey (clear liquid protein). I'm not sure that essentially removing some of the whey is necessary to the buttery flavor.

    Intriguing recipe - I will try it! One point about measuring the liquids: the dry-measure is accurate when you scrape flat across the top of the cup. That's the same when measuring a liquid, which is awkward to do without spilling. That's why my mother's generation never donated those sturdy old Pyrex liquid measures that printed amounts twice (to level) using both sides of the glass. Newer, super-caustic dishwasher 'soaps' burn off that paint. So now those once-trusted tools show up in second-hand stores, often minus visible measure-marks.

    I think the final product has raw eggs. Which is not the end of the world but most gelato recipes call for low-cooking the final product slowly with constant stirring till it gets to 170 degrees or just before simmering. Thanks for all the great videos!

    I use all of that but not the eggs. I just mix the cream with coco and stevia and throw in the nutrabullet and it turns into a moose like substance then just put in the freezer for about 40 min. So much faster and easier. Dang and yours takes too much time and materials. That’s exactly what mine looks like but no eggs and 40 min.

      Victoria MacPhail usually no because I eat it once it’s ready. I just make enough for one serving. I would imagine that if I left it in the freezer over night it would get hard. I think this recipe with the egg would too though. When I make it in my nutrabullet it creates a heavy moose like substance that good on its on. I just put it in the freezer for about 15 to 20 min then stir then keep doing that until I feel like it’s good. Honestly it’s good from the beginning plus you can eat it right away.

      Chris C. All I use is coco, cream and stevia. And it takes no time at all. No boiling freaking eggs.

    Gelato actually has less milkfat than ice cream (often uses milk vice cream) and is denser, usually 25-30% air by volume vice 50-70% for many ice creams. Concur that it is delicious, thanks!
