    I made this last night for my girlfriend and it was a huge success! I had never used burrata before and it was a pleasant surprise! The sauce became so creamy when it was all mixed together it's a little hard to put into words how good it really was. Thank you for so many good recipes! I've learned so many new Italian dishes watching your channel and I've loved every one! I can't wait to make this one again because I know with experience, the dish will only improve!

    I haven’t tried this Burrata, but my wife’s favorite pasta in the world now is my cherry tomato Pomodoro, learned straight from your channel Vincenzo. Only difference is I found I like the tomato flavors even more with the richness from a table spoonful of Tomato Paste. Growing up I always thought I liked thin pastas the most, but now my whole family is in love with thick square spaghetti. I even tried with angel hair one time, but my kids demanded we go back to “same pasta as Vincenzo.” 👏👏👏

    I made this with my family and it was amazing, first time trying burrata cheese in a recipe ! I thought I might eventually add shrimp to it but after trying it, found out there is no need. The cheese is very savory ! its complete !

    I adore this combination and often prepare it, either with fresh cherry tomatoes or an already prepared cherry tomato sauce (only made with cherry tomatoes and salt) which I buy at a local Italian shop :) It's perfect for a quick dinner, so delicious and comforting! Burrata is heaven on earth!

It is one of my favorite dishes, and I often prepare it myself, both with fresh cherry tomatoes and with a ready-made cherry tomato sauce (made only with cherry tomatoes and salt) that I buy at a local Italian shop.     I use the basil and tomato stems in the pan and pull em out once it infuses with the garlic. Leaves go in at the end. Hand torn only as Vincenzo showed me.

    I used to bake/broil cherry tomatoes cut in half tossed in extra virgin olive oil then put that on top of bruschetta toast and top with cheese and broil a minute to melt. And I would sometimes saute them just like this but never thought about using it as sauce. I love the skin on because I prefer the texture. I have never heard of either of these cheeses before. I will have to try them one day but I bet they don't have that here in Alaska.

    Wow! You dishes are just better and better. I made this pasta today. I have to share…I have 4 kids and 3 are teenage boys…they eat ALOT. So, I have to make some type of protein to go with the pasta (that’s also our Hispanic roots that we need meat). I made your version of chicken Parmesan along with this pasta. Served separate of course. It was a hit at my dinner table. Thank you for sharing your culture and delicious recipes with us.

    I have cooked this today and the sauce was heavenly creamy and so delicate. It reminded me of the wonderful smells and flavours of sunny days when I was in Italy. The burrata I got here may not be the best, but at least I could find any burrata. Dear Vicenzo, my master teacher of quality cooking, thank You so much for all the recipes. Most of Your pasta recipes I have tried already over the past few months and they were all great. Next stop: Pasta alle vongole or scaloppini, though seafood ist really expensive here (1kg scaloppini: 60 €; shells for vongole: 30 €).

I use to only “like” Italian food, but since watching your channel I’ve grown to “love” Italian food (to which I’ve tried many of your recipes and have gained 10 pounds of “healthy fat” 😂).     I've been making this dish ever since I found your other video with the same recipe a year ago (Spaghetti al Pomodoro). I love the simplicity of the few ingredients and I'm still amazed by how creamy the sauce gets without adding cream or anything else. One of my favourites!

    I make pasta more or less like this (without burrata (but sometimes I use with mini mozzarella di bufala), without blending... using parmigiano instead of pecorino) almost every day in summer. Convenient (it takes very little to make), very good. I just love it. Every once in a while I add some paprika or I try to use different kind of cherry tomatoes. The last one I tried was the "Pomodorino del piennolo del Vesuvio", I found it by chance and it was a discovery. Releases a lot more juice without doing anything, really good... so much so that I'm thinking of replicating the thing (just leave it to dry in the sun... doesn't seem too complicated, although obviously the soil is different here).
    I will try it with burrata next time. It looks delicious (not today... Today I'm doing Bollito Misto alla Piemontese, the best way to do boiled meat)

    A little recommendation from a chemist with experience in food industry: When buying extra virgin olive oil, choose the bottled ones in dark/opaque cristal. Light and heat speed up rancidity and denaturing of vitamins A and E and antioxidants.

    The Burrata instantly doubles the cost of the dish but would be so worth it, looks amazing 🤤 Pecorino is amazing though, grate that up, make it into lines and good to go all day

    I actually love the texture of the tomato skin :D I love my pasta sauce to have some kind of texture. My favourite pasta with cherry tomatos I put roasted chopped almonds in there too. Gives awesome flavour and a nice crunch :D

    Vincenzo, I've learned so much about cooking in general and Italian food specifically from you. Thank you for the great meals I've shared with my friends and family, even if I mess up 1/3 of the time XD it's always fun. Pecorino is so dry! I can't get it to emulsify yet for sauce. It always turns to curds.

      Lower the heat level and add in earlier, not off like a Carbonara but very low. I use it all the time when doing risotto and it NEVER curds. Your pan is TOO HOT.

    I love this recipe, I made the other cherry tomato recipe many times this summer. I had fiaschetto di manduria tomato I loved so much, too bad the autumn taking away. Only one thing I would change on the recipe, I would use stick blender in the pan carafully to not touch metal with metal. I think I will do it that way :-)

    We made this and while it was lovely there was far too much food for 2 people as a main course! Will certainly make the recipe again but with perhaps 2/3 of the spaghetti and half as much baratta. Also felt that perhaps a few olives chopped in would be a good addition. Great way to use a glut of cherry tomatoes though!! 😁

    Hello my friend, thank you for another super simple yet amazing recipe. I have never heard of burata cheese, so I've learned two new things today. Can't wait to test this, probably tomorrow already, just not sure I will be able to find burata cheese in Prague. What would be the best replacement by your opinion?

      @@vincenzosplate I already did that yesterday 😃! Used mozzarella, it worked out great, and the tomato sauce was amazing. I enjoyed it very much and immediately put it into my favorites 😋. And I found you can order the burrata cheese, so I am definitely trying that in the future. Thanks again and keep those delicious dishes coming, wish you all the best.
      Edit: I was even thinking about cottage cheese as an alternative to burata, but that didn't seem to be the right one, what do you think?

    Great recipe as always! Sauce from reduced passata + penne and a ball of burrata is my lazy day dinner. Simple, almost effortless but delicious. That's why I love Italian food, if you get good quality ingredients it is almost impossible to mess up the taste :D

      Passata only $3 at Safeway, IF stocked, I bought six and left one for the next person before restocking. Cento from Italy unlike their paste.
