I just tried this recipe just for the mozzarella, and it worked like a charm! I do have a question though: the mozzarelle I buy at the store are usually more salty than the one I made. Did I miss a seasoning step somewhere? Or is it just the normal taste of mozzarella I'm discovering? 😅
@@lucannor6202 I didn't mean salty like with a huge salt flavour, I meant with a more salty flavour. The water solution of the store bought stuff is maybe salty?
We use the same process to make paneer in india- bring the milk to a boil, add lemon or vinegar, milk splits then we separate the solids from the whey and keep it pressed for a big and firm block of paneer. It never gets stretchy like this. I know you need to use rennet to make any kind of cheese usually. How come you haven't mentioned that here? Am i missing something? 👀

Hey there, maybe try this; After place the curd into the bowl, microwave the cheese for about 30 sec. until 155-165F, then using your hands, stretch it and fold until the cheese is smooth. (Or you can do the heating part using 155-165F hot water and let the curd sit in it for around 20 sec) Repeat the process one or two times until the cheese is well smooth. Hope this helps! And remember; The cheese and water will be hot, so you can use food-safe gloves during this process.
When I've made this, it seems like the cheese gets smaller and smaller, so by the time that I'm done, it's half of what I started with. I don't get it....

I think the last step, the mozzarella is dunked into a brine for some time to preserve it better. Maybe that is why you feel a lack of seasoning.
