As a business owner, I can tell you that the "subs vs employees" comparison is just a distraction, a myth, it's irrelevant. The only real difference is pay structure- subs are paid by the job, employees by the hour. Both subs and contractors can have "agreements/company code of conduct" that goes over everything from work quality, to work expectations, to behavior, to no smoking or drinking on job ever, to how they talk to and respect client, to on-job hours, etc. Both subs and employees can either be amazingly great, or totally suck, or anything in between.
A good business will have great subs and great employees, because they will train BOTH well. Their subs and employees both work for them consistently, long term and become like family. Our company has both employees and subs and they both work for us constantly for many years now.
A bad company will have crappy employees, and also crappy subs. Crappy employees are bad because they are lazy and entitled, they think they will get a paycheck no matter how slow or badly they work, they know they will get unemployment benefits if fired. Crappy subs are bad because they may be selfish or rush a job to get paid. Both crappy employees AND crappy subs can no-show a job if management isn't on top of it, and both crappy employees and crappy subs can have side jobs if management isn't on top of it with a legally secure NON-COMPETE AGREEMENT and also constant work for said employees and subs, to naturally keep them loyal.
The whole dialogue is a farce- the real thing that matters is the intelligence of the business owners and managers, the company structure and system in place, and obviously- what actually matters most of all, but isn't politically correct to say- what matters is the WORKERS THEMSELVES (whether employees or subs). Good businesses are VERY PICKY, they interview 15 to 20 interviewees before hiring just ONE (1) sub or employee. Bad businesses (I should say, foolish businesses) hire the first or second guy that comes into their office because they don't have the diligence to interview more in-depth and compare to other workers to see how the market is. ALSO, good businesses constantly provide both subs AND employees, with TRAINING, with excellent textbooks and youtube materials FOR FREE to study and learn more each weekend, so that they become the very best they can be at their jobs, both technically doing the best actual work and also give the client the best and happiest customer experience. Good businesses retain great subs and great employees for many years, build relationships, get to know each other's families, so that they both know they can depend on and respect one another and do great work together.

Great comment. I’m a general contractor and I only use sun contractors as I need to take lots of time off for family medical appointments. I used to also work for a company who did a lot of work for Turner construction who only have office staff and sub in every trade and they are one of the biggest construction companies in North America. They also sub a lot of there, managers, coordinators, book keeping and administrative staff too.
I find subcontracting is way less stressful than having employees

If you were to hire subcontractors what would be the timeline for each to show? For example, the plumber would need to be on the job just before and after whom and how often. I haven't seen any videos like this

Usually we establish a start date for each sub and it overlaps the previous sub so that they’re stacked on top of each other as much as possible. Might sound silly but when they end up pushing back by a day or 2 it winds up still being a tight sxheudle

I've been thinking about the sub vs. in house work approaches, they both have their advantages. What would you say the most scaleable approach would be? (less time, more capital available situation)

      Subs 100%.
They acquire the labor for you and you go and get the work and feed them
