- Buying salmon can be overwhelming-farmed vs. organic. Frozen vs. fresh. Wild sounds great, but which one? Coho, Alaskan, Scottish, King, Alaskan, Steelhead… My advice, and the rule I follow when I shop, is to ask the person working the fish counter. I think a fattier type works best in this preparation, but tell them you don’t want something too buttery because it needs to stand up to the spicy-sweet-charred marinade. If you haven’t purchased gochujang before, it has become pretty easy to source in mainstream markets. You can definitely find it at an Asian market or order it online. A little goes a long way, it lasts forever, and you’ll find plenty of other places to use it.

As a Korean, I loved how she made the perfect bite with the toasted seaweed and ate the 쌈 ssam (wrap) in one bite, as we do.
I also appreciate Carla's accurate pronunciation of gochu-gang. Whenever I hear some Food Network chef say the word, I yell at the tv.
As a Korean, I was about to say the same thing. Agree with your commenter as well on the pronunciation of gochujang. Close enough. Its not hard to say it right lol!

Hahaha I so felt this!! I"m so happy I moved to a new hood with butcher and fish monger few blocks away. I always feel like such a fussy old lady when I go to the grocery store and try and get meat/fish 😂

Update: Came out amazing! I scored the top in a crisscross pattern and marinated it for about an hour, made it in the air fryer without flipping it for around 10 min at 400 :)

Making tonight. Already in the glaze/marinade. As an Alaskan, amazing and fresh salmon is in abundance! Might not get my hands on chili garlic crisp or furikake in my small town, but it will still be delicious! Going to try grilling instead of broiling.

@@f.s.2642 Great! The charring was all on the bottom because of my grill. A little spicy for my wife, but she's a wimp and just wiped off some of the glaze and thought the flavor was great. No Kimchi. Had some alternative Japanese season blend instead of furikake. Pickled cucumbers too.
Wondered if grating fresh ginger would be good or too strong...
If you (or a friend) get to Anchorage, hit New Sagaya. They have multiple varieties of furikake! It keeps well!

Ha! Toaster oven fan here. The chocolate chip walnut loaf I just made in my toaster oven rose so high it hit the burners ! No problem. I sliced the burned (crisp) top off (and ate it) and put it back in for 10 mins to crisp the surface. Next time I won’t put as much batter in, or I won’t use a loaf pan. Salmon on Friday.

Love my "toaster" oven! It's so much more accessible for me than a big oven could ever be (using a wheelchair). Im gonna have really start making this, looks AMAZING. And so easy! Would love to see more things that could be easily prepared in the counter oven. 😋

If you make extra marinade it's basically "ssamjang" and is great as a dip for raw veggies.

Do you think the skin needs to stay on? Or would taking it off prior to marinating be okay? I just hate taking the skin off while eating. Love your videos!

Any suggestions for subbing out the oyster sauce? Bivalves are not kind to me, and we have not found a vegetarian oyster sauce that we like.
Made this tonight for the first time and loved it! We've got chronic baby-mouth in my family so I halved the gochujang and only put a few drops of the sesame seed oil (I find it VERY strong) so the taste was very mild but delicious. I'll probably up the gochujang to 3/4 of what the recipe calls for next time, and there WILL be a next time- this is going on the regular meal rotation. Delicious!

go for it, totally! a version of this recipe had ginger and it was good, but i was just trying to keep ingredient list as short as possible

Girlllll. Immediately in the rotation. So, so easy. Highlights the homemade kimchi. Easy to mix your own furikake. All things good. Might use the salmon for our next bibimbap night. Ooof- winnnnnner.

I like the counter at Provisions on Fulton, Mermaid Garden on Vanderbilt, and also use Fresh Direct often, as long as the fish I want is “top rated” (their words)!

Cold leftover rice is ideal for fried rice so it's a win-win if you make a big batch of it and just make two meals.
I thought to myself - finally, a recipe that will let me use some of my gochujang which currently sits very lonely and abandoned in my kitchen cabinet, but it turns out I'd have to buy mirin, rice vinegar and miso to keep it company later so I'll probably pass :) The recipe sounds delicious tho ;)

I always giggle when people talk about julienne peelers. I've been using that nifty tool since I was a kid 15 years ago. It was always my job to shred up things like cucumbers, carrots, daikon radish, etc etc.
