    The cream cheese I know can't be cut. It is used for baking or on a sandwich, like butter. It is way more creamy. Tis looks interesting though. I'll try it.

      yes, I think if I used only 1 cup milk instead of 2 it will be creamer than that, thanks for sharing

    I love the idea of being able to make it myself. ... but the price of the ingredients vs store bought cream cheese isn't budget friendly sadly. but will save your video for just in case future knowledge. thank you for taking the time to share!

    Wait... 2 cups heavy whipping cream, 1 cup half an half, 2 cups whole milk... isn't that basically 5 cups of half an half?

      +Jenny Tokumei No , I wrote to you the fat percentage in them to see that it is not the same:
      whole milk 3.25%
      Half-and-Half: 12% fat
      Light Cream: 20% fat
      Light Whipping Cream: 30% fat
      Whipping Cream: 35% fat
      Heavy Cream and Heavy Whipping Cream: 38% fat

      you can substitute it with half cup whole milk and half cup heavy cream, the fat percent will be little bit different but it will not affect the recipe

      If my math is correct, you get 5 cups of of 18.9% fat milk-cream mixture, very close to that of Light Cream ;)

    When boiled and vinegar is added and is now at a simmer - how long before curds appear? Are they large like cottage cheese, or is it just really small stuff floating around? Can't figure out if I am doing something wrong. How long would you say this "simmer" mode is for - 5 min, 10 min, or longer?

      +PeterGregg after adding vinegar, it will take about a minute to have the curd, it will be fine curd but it will gather with each other on the top, and the important thing that to use whole milk,

    hello for what are you using this cream cheese? is this equal to cheese spread? and can we use this to baking? and in my country i can find natural coconut vinegar , will that work??

      it similar to philadelphia cheese,
      I never tried to use it for baking so I am not sure it it is work, especially the one from the store is cheaper than the home made one, about the vinegar I don't know, I never used it before

    The recipe is very nice but I have not understood what is means of half and half and without using half and half can we prepare chese only by using milk and cream

      Naureen khanum half and half is milk with fat that comes between whole milk and whipping cream, you can substitute it like this, 1 cup half and half = 1/2 cup whole milk + 1/2 cup whipping cream

      Carla Bestetti I didn't try it in other things, so I am not sure if it work, I think it will work with unbaked things but not sure about baking recipes

      +Diala Achkar I use the cups that follow USA measurement so the cup is 250ml, anyway this recipe depend on cups only so you can use and cups

      I never used it in other recipes, so I am not sure if it works, I think they add more things to the one from the store like some type of gum

      John Martin you can substitute the 1 cup half and half with 1/2 cup heavy whipping cream and 1/2 cup whole milk

      You can use it but the taste of frosting made with Philadelphia cream cheese and the frosting made with home-made cream cheese is very different.

      +Migz Raquel I am not sure really, I tried it once as filling inside a dough, I shaped the dough into small balls like buns and placed amount of this cheese inside it, closed it well and baked it, they turned well. But I didn't try it in another baking recipes, I want to try making cheesecake but still afraid of trying that.
      The recipe gives about 400g cheese

    I would love to try this by using 4 cups of heavy cream and the vinegar---stay tune----I will let you know---I just think that using Milk and Half and Half confuses people ---- !!!

      +Raghad Abdulla abd continental You wouldn't end up with butter - cream has to be "churned" to produce butter; plus, with the exception of pasteurisation of the cream, there is no heat treatment (the cream used in butter production is best used at lower temperatures to encourage "clumping" of the fat molecules) or addition of any form of coagulant (e.g. vinegar or lemon juice) to produce butter.

    Is there a difference between using the cultures and vinegar to separate the curds? Is one way better? Or do they produce two totally different types of cream cheese?

      you can't use cultures with Pasteurized milk, it will not work at all so I use vinegar way at home

      Dilip Kumar half and half is kind of cream we have in America, the fat in it comes between the whipping cream and whole milk, if you don't have it at your place you can substitute it as this 1 cup half and half = 1/2 cup whipping cream and 1/2 cup whole milk

    Wait a minute... If half and Half is basically 1/2 Heavy cream and 1/2 Milk couldn't you just use 5 cups of half and half for this recipe?

      +minakshii1985 that only for the people that doesn't have half and half, and it will be small amount, but you can't do that for all the recipe because the percent of fat will be very different. It is always better to follow the recipes without change

      The exact same ingredients and method are used to make Ricotta. I make ricotta all the time, and this is how I do it.

      +Rocky Bing Actually ricotta is made with the whey that is left over from cheese making. Ricotta is an italian word that roughly translates to recooked. So basically ricotta is made with the leftover proteins in the whey that you get from cheese making

    Looks like you don't know what you made. You just made feta cheese in this clip. This is not cream cheese! It is great tho. Very tasty and yummy. Just not cream cheese.

      +sanjay gami it is kind of cream we have here in USA, you can substitute it with 1/2 cup whole milk and 1/2 cup heavy whipping cream, but only for this cup because fat % will be different but for 1 cup it will not affect that much
